A better use of the term than most. Though I feel that ageless is a more apt description because I doubt that Celestia could survive being impaled through the heart with a spear, etc. Wolverine or a Highlander are immortal.
Additionally the age comment with Oman is hilarious
6208839 Actually, I bet that is a referance to a very very old story. One of the oldests I remember. It had Celestia's and Luna's armor actually being enchanted to make the wearer look like that. And someone wears it from young adult till old age. But before hitting very old age, they train a 'student' and then when they retire, the 'student' becomes Celestia/Luna.
It was a nice little one shot, from way back when, back before Twilight was even thought of as an Alicorn.
I don't think immortal is the right term here, but ageless is more suitable.

6208881 This chapter was a very nice, and much-needed, return to normalcy. Silver finds out that his servants are largely comfortable in their relationships with him, and he starts to make some real steps forward in accepting that. This is particularly important since Luna is busy convincing Night Watch that Silver should have concubines, something that will go over much easier than his returning with several new wives.
It was very gratifying to see Fiddah get a chance to shine here. She served her function admirably, placing herself between one of her charges (Shei, in this case) and what was upsetting her, even when that was her master. She did a very good job explaining that while Shei may have been romanticizing her future with Silver, what she wanted most is stability - something that's more true now than ever - and that being a servant grants her that far more than being a "suitor," with its possibility of rejection, does. This was a very salient point.
More important is that Silver finally seems to be coming around to the idea that he can be in a physical relationship with a mare, even a close one, without it needing to be love. Bottom may have dropped the "friends with benefits" label in jest, but that's actually a really important lesson. Silver has been adhering to the idea that he should only have sex for love, or for procreation; there's a middle ground to be had, and his concubines fall squarely in the center of that. It's not wrong to have servants, and if they're comfortable with it (and his wives don't mind) then it's not wrong to have sex with them either even if he's not enamored of them.
Fiddah is already proving her worth by helping Silver come around to this point. In all honesty, I see his harem as being essentially a private corps of mares that perform a wide variety of tasks, and simply also happen to be comfortable with putting out for their boss on command. Sort of like the warlocks, albeit with an erotic function. Just because he's keeping them for sex doesn't mean they don't, or shouldn't, have other functions that are of great value as well.
Having sorted those problems out, Silver and co. are now bound for Turkey...in exactly five days, for a three-day tour, to acquire an item that's not for sale. Man, those birds aren't going to make this easy. If they're that skittish, then trouble is practically a foregone conclusion. I can only imagine what will set them off, but I'm sure something will set them off.
Also, Oman's refusal to accept that Celestia is older than he is is quite amusing. He's rapidly becoming the archetypal curmudgeon who can't accept anything that doesn't fit his world-view. No wonder he's so irascible all the time.

Silver feels a bit better about things, though he's likely to pull back on the sexual hijinks with them once levitating a spoon isn't reason enough to want to. Of course, some of them are quite talented at things, so what he wants and what he gets may not always line up.

I can see Fiddah would have ben a huge help in the last story but I have a really good feeling about having her around.
