For armor: A breastplate and vambraces, over a padded coat, add a helm, fin.
For weapons, this is where things get sticky. Two-stick is straight out. He's an amateur, keep things simple. I think the sabre idea might not be bad for image, they can be quite classy and are still perfectly functional. That being said, some kind of polearm - a spear, halberd or glaive - is a must if he really expects to fight, not just defend his honor. The spear is frankly the simplest and if you get a leaf blade, you still have some limited slashing ability.

Well, by his own admission he's no warrior or soldier, so this very training would serve to help him learn how to use them and how to defend himself.
I long for the day that Anon talks about something that is completely acceptable in human culture but but leaves Purity so embarrassed she turns into Fluttershy for a bit.
Armor is going to be a lot heavier than anon thinks, and more and less restrictive than he thinks depending upon the kind of maneuver. Swords require a little more skill than he is likely to have. Maybe a mace considering his height.
Je the good thing that we follow the mares, and not the human is that we can fill the gaps as we wish.
For all we know Anon has a couple of secrets of his own. Maybe he DO know how to fight or the magic in Equestria has a passing effects on him like a sponge throw into the ocean. We already had a clue, with been able to potentially outrun a unicorn with only 20% or maybe even 15% of his power. His mind been able to memorized and wrote down complex and incredible long procedure of mechanics in record time…over and over again, not to mention he knew military lingo and how to guide a sniper out of seemly nowhere despite not having military training that we know of, and that is not something an engineer knows.
That means he has photographic memory and an innate way to retain it. And what happen with Luna if she really did all that, then he also has mental fortitude beyond anything I have seen.
It an enigma how he can surprise us later on. Maybe there is more that even he is aware maybe he doesn't want to fight because nobody knows how his latent magic and mind could activated if going into offensive. Maybe it will be like Sherlock and everything will simple stop and he will be able to see and map an attack movement that will secure his victory in just a couple of hits. Maybe even one. The possibilities are endless. Makes me even wonder what could happen if he ever gets angry, and I mean real angry. And how dangerous can he really become if someone 'pokes the bear'

Well Atleast during our middle age, spears were typically better for inexperienced people, as they are easier to use. That’s why most infantry armies used spears or pikes throughout the medieval age.
However a sword or saber is more beneficial of his status. A sword is much harder to use and requires more training but is easier to carry around and use as a status symbol. Nobles in our medieval age carried swords because only knights and high ranking nobles (and guards/soldiers of course) were allowed to carry arms during peacetime and a spear is not a easy weapon to carry around the palace.
I’d say he’ll probably use a sword of some type. He doesn’t really have to be an exceptional swordsman since he has basically 24/7 protection from his guards so he won’t have to do insane amounts of training. However the status and social symbol of him carrying an ornate sword could be helpful to him.

You guys, please... Lord Anonymous must be kitted out in full plate and armed with a poleaxe. He has the endurance to handle it, and he'll need the protection of full plate if Glamerpone is any indicator of what unipones can do.
A poleaxe is the best weapon available against most types of opponents, both armored like Sparkypone or not. It also requires minimum training to be effective.
Also, he must get a chariot and his quaternion must pull it. Not because it'd be particularly effective, but because it'd be cute as heck.

That armament does sound feasible, and I can't dispute it's effectiveness.
But, I don't see him using such a thing in a sudden pinch. So perhaps some light marshal arts, grappling, and dagger training would suffice for the beginning sessions. Once he can show his ability to survive a sudden encounter without weapons and armor, then is when I would suggest more intensive combat training.
This is just my personal impression though.

I happen to agree with both of you, but believe the full plate should come later after padded training armor to get used to armor at all, and possibly a concealed armored clothing suit for normal wearing outside the castle. I also agree that endgame for him should be a pole-axe, used to be pretty darn good with one myself (years of contact fighting sport will do that :). I also agree that they should start him with the most basic of basics first. Hand to hoof combat first followed closely by dagger. After he proves he can handle that move on to more advanced arts, possibly even fencing as rapier is a noble weapon... Just my two cents :)

Honestly, while it's a lovely weapon I very much doubt he'll be seeing one for the very simple reason that he's equipping himself from an Equestrian armory. Try to imagine a pony using a poleaxe, it doesn't seem very likely, does it? I'd say that'd be a Minotaur weapon, and let's all take a moment to imagine what someone like Iron Will could do with an appropriately scaled poleaxe.
I'd expect him to be able to find spears or perhaps unicorn swords at such short notice, maybe a war hammer for sufficiently powerful unicorns.
Edit: managed to find an impressive fight, not strictly poleaxes, but close enough. And on a related note, this is how Sparkshower was able to ignore Joker like that. Full plate is no joke.

You ever watch the old Akira Kurosawa film, Seven Samurai? There's a nice scene where they are sitting around deliberating on how best to arm the local militia. Sure enough, they settle on spears, reasoning that there isn't enough time to adequately train them for anything else and spears group very well together.
Plus, ya know.... they're pretty damn cheap and easy to make. Heck, you don't even really need to give them iron tips if they aren't available; just taking bamboo or wood and sharpening the end to a point can serve in a pinch.
Of course, time to produce, materials, and money shouldn't be any problem at all for Anon.... I just find the logistics of that kinda thing fascinating. There are a lot of ways for a weapon to be good, and some of them don't involve the battlefield directly at all.
Gunnery is definitely something in pony land, given they had a naval rangefinder just sitting the guard inventory. The rangefinder implies something to be shooting at that range, which oddly, puts them fairly more techologically advanced the most guard equipment shows. Given he has access to machining, a black power pistol seems within his grasp. Sword and pistol is the way to go, although unarmed and knife fighting would also be useful.
Gotta lose that first had. In fact, you gotta lose a lot of "hads" especially if "had" precedes a word that ends in -ed. Is a hard habit to break.
Just saying "Lily used one..." has the same effect, and it reads a little better.

I haven't watched that but I find the logistics behind the prominence of the spear very interesting, especially since common stories and movies depict swords as much more common then they are. Really only better off middle class peasants would be able to afford a short arming sword as a secondary weapon. Really the only major exception to this is the Roman Imperial army, and even then they still used throwing spears.
A minimally trained peasant spear wall could take on a potentially take on knights, and we see at the end of the Medieval era pikes triumph over the typically dominant knights of the era. Probably the greatest thing about the spear/pike is that you can put it into the hands of a militia and they can use it to decent effect, at the same time you can put into the hands of a disciplined and professional force and that same spear can dominant the battlefield.
Riot gear would be optimal of course if he could provide the materials.

As for weapons...as I understand it, in human history the sword was basically a sidearm because it was easy to carry around with you pretty much all day for self-defense emergencies if you wanted as well as potentially a status symbol (depending on the place and time we’re talking about), while on the actual battlefield where you suddenly had to think about things like effective engagement ranges and ease of formation fighting it’s probably not too much of an exaggeration that you wanted spears and bows first and pretty much everything else second (though still there for its own purposes).
That’s human history, though, and pony fighting traditions may differ and have to be considered here as well. What weapons would natural fliers like pegasi and batponies favor, for example, and how would that color the perception of what weapons might be appropriate for “nobles”?

Alright, there's a bit to unpack here. The sword became popular in Western folklore thanks to the tales of chivalric knights, and soon over saturated fantasy. As far as movies are concerned, spear-fighting is much harder to choreograph in a manner that makes it entertaining to watch. As far as the prominence of swords is concerned, it really depends on where in (Eurpoe) you're talking and when. In some times and places it was not uncommon to see a peasant with an ancestral sword, in others, they were forbid from owning them. (Also, a middle-classmen isn't a peasant, they're addressed by their profession.) The Roman Army isn't even from the middle ages, so it's a whole different beast, and it wasn't just the Imperial Army that used the Gladius as their main weapon. As for peasants in a taking on knights, that again depends on the where and when, sometimes it could happen, others, the knights (and their horses) would be too well armored. Even the statement that pikes of the high-medieval era defeated knights is still not wholly accurate, see my above comment.

Whether the sword was viewed as a primary or a secondary really depended on, say it with me, time and region. The Roman Legionaries certainly viewed the gladius as their primary weapon, as did the viking raiders whom acquired them. However, just across the pond from Italia, in Greece, the Hoplite definitely considered his sword a sidearm. You do touch on a very good point though, once you start talking pony combat, everything you think you know about fighting does out the window. Outside of unicorns and pegasi, who knows what weapons earth ponies might use? IMO, probably reinforced horseshoes.
You know, it's a little touch, but I really like the way that Ebonshield's chapters have some of her tics in the narration, and not just in the dialogue. It really helps with the immersion that these are separate POVs.
I have to ask, though. "Glamerspear"? Where did Glamer come from? I wondered early on if it was just a typo of 'glamour', but forty chapters later and it is still bugging me.

What was he supposed to do, and what good would it have done?
Consider who Honour Bound is: she's a jaded, world weary corporal who had lost faith in the Guard and any sense of importance in what they do. Along comes the Royal Engineer and Princess Luna, who not only make her feel like she and her work actually has meaning, but gives her a literally religious experience. And then the Royal Engineer comes along and tells her that her very duty, which she just regained her sense of pride in, is a nuisance (albeit in jest). She proceeded to blow her stack at him, and then realized she was way out of line, but he realized that he hurt her too, and he wanted to apologize for it.
How does that make him a doormat? What would the alternative of blowing up at the corporal, or dismissing her, achieve?
