ok, bit of a nitpick here, but this would actually not be AC. AC (Armor Class) is how difficult it is to hit something with an attack. When you're talking about how hard it is to overcome a save or skill check, that's a DC (Difficulty Class).
And on that note, for spells that are not like shooting a projectile (like Acid Arrow) but are instead trying to inflict some other effect -- such as Dominate Person -- the caster is not going to be the one rolling the die (and it is die, singular, not dice, which is plural). Instead, the defender would attempt q Saving Throw against the Spell DC of the caster.
