7236996 some of that has more to do with him being new and wanting to live, he'd probably be calmer if his life wasn't on the line and he knew what he needed... Also a lot of what you mentioned is just natural traits you see or expect from that species in the stories about them.

I like doing this, relationships that aren't exactly healthy. Luna's desperate for companionship, as she's just starting on her decline and has no one to keep her company. In fact, many are pushing her away, preferring to deal with her sister. Max is stuck on an alien world and while he knows some things that may happen in the future, that's it. If they don't help each other, who will?

* Really help reduce labor needed in construction.
Compass and sextant.
* Find out where you are using a compass and the stars!
Printing press.
A. They lost a lot of books & this will make creating replacements very easy. AKA. Very useful.
B. The concept is extremely simple that anyone with some carpentry skills or metal craft can create a simple printing press.
glass lenses.. aka glasses, microscopes, telescopes, magnifying glasses.
A. This will take more work as the idea is simple, but they would have to learn how to grind glass lenses.
B. The benefits are enormous.
* Magnifying glasses will quickly let ponies with bad eyesight be able to see details again.
* Glasses, and optometry will help ponies see better in general (but will probably be too expensive for most until enough glass makers learn how to make lenses and there become enough metal workers capable of making glass frames)
* Microsopes will help them develop spells for diseases better as they can see the effects of certain spells on microorganisms.
* Telescopes will help scouts.
* Telescopes will help increase interest in the night sky.
With the return of discord tomorrow I wonder if Max will get a "Changelings for Dummies" book for his work so far?
Well, it took me some time to write here, also, way too much time to find the hero guy. Huh, my favourite is Friedrich Lengfeld. (Yaaay for making people remember german heroes!)

But finally someone who actually don't immediately listen to our hero. I mean, yeah Luna craves companionship, so she can believe all she wants, but he is an unknown, so you should threat everything he says with caution. And so far it was not really like that.
Also, please make his freak out the stuff of legends. He told he is only keeping it together because he is scared what happens after the third day. He now hase days of bottled out freak to let out. At least make it funny, like having to finally pull him out of Celestia's hidden sock drawer.

Sextant, because most people have no idea what that is anyways, let alone how it works, not to mention Luna messing with the sky.
Lenses are really-really hard to make without proper tools (and still really hard with proper tools), and to make an effective telescope or similar, you would need a lot of math.
The rest are good ideas.
Here're mine. Wall of text incoming. I tried to grab only stuff a standard run-of the mill guy could know though.
Standing army
May sound suprisingly standard idea, but an armed, trained and paid army is much more effective than the usual rabble a lord put together from his peasants. Also, since they are paid, they will be more willing to fight, and less prone to looting (will do it anyways).
Clean hospitals (or hospitals if they don't exist yet), and washing hooves.
This was a tremendous problem back in the day, Look up Ignaz Semmelweis, he reduced the mortality rates of childbirth to below 1% with the simple act of washing hands and cleaning the hospital (needless to say the head honchos didn't like him, cus reasons). And that was in the 1800s, so not that far away.
The idea of vaccines
Only an idea. Ponies probably have no means of implementing it yet, but it could prod them in the right direction for research.
Public and mandatory schooling
A country of idiots are easy to rule over (see: cartoon Equestria), but you waste potential.
Military ideas for community stuff and vica versa
Like using explosives in mines, or using a new steel smithing technique in weapon and armor manufacturing.
Manufactories
Faster production. Would need a large population first though.
Patent system
Encourage inventions, because you could actually make money from it, and would also help spreading technology through the country, as patent offices need a blueprint and an extensive explanation on what the heck is that thing and what does it do.
Gunpowder
Yes, me preaching gunpowder again. Truth to be told, it's not that important with unicorns, but it can be used in mining (albeit don't breathe in the fumes), and if making weapons, it's easy to train people to use a gun (point-shoot).
Canaries in mines
I think I don't need that much explanation, now do I?
For a later development stage: The idea that steam can be used for powering sutff (Pretty sure most people have no idea how it works), clockwork (really hard to make without tools), removing power from the nobility (Power to the ploretariat!), and a rank by merit system. That was actually a giant problem, even in WW1. Idiots should not get to lead an army because of birth
And most importantly, plumbing. It would also be extremely useful in firefighting. Speaking about firefighting, regulating how close wooden houses can be to each other.

If he was a chemist... then... Nitrous oxide for use as a pain reliever in surgeries/setting bones/other painful procedures. Before we had pain relievers, knock out drugs.... most people died from the shock of surgery before they even could die from disease.
Architecture is another area that could be improved. Just knowing about the strength of triangles and arches could advance architecture allot. If he knows the formula for concrete he could advance construction hundreds of years... as concrete is much better than many of the mortars they had before.

Interestingly concrete was used by the Romans. At least I once heard on TV.
The best he can do though is encourage ponies to share ideas, there must've been multiple times one was turned away because of birth.

Yet the image of them putting their hooves into boiling water was just too funny. Albeit now that I think about it, their hooves themselves could handle it, if they kept it away from the fleshy bits.
It could be a good way to show Celestia how far ponies would go after her and not Luna by asking them to wash their hooves with boiling water.

No. But one of the main reasons humans died from wounds was from bacteria getting exposed to the wound. It's very good at preventing diseases getting into you. Clean water for cleaning cuts and sterile bandages greatly improved survival rates.

(2) how does Max know what level of technology the Equestrians have? As far as the story goes, Max hasn't been outside the castle. I mean sure, about 99% of all fanfics here have Equestria with medieval era technology, but even then, many of these fanfics (despite the technology the equestrians have) were able to produce relatively new technology and weaponry (TD the alicorn princess has flamethrowers, napalm and war tanks)
(3) so if a noble buys a wing and horn token, can the noble become an alicorn? Because, as far as I know, tokens can be bought, but the genes that give horns, wings to a pony can't be bought, either you're born with them or not. There is no grey area.
(4) here's the explanation in how Max got to Equestria. A spirit/god of chaos (after kicking Celestias and Lunas ass) got bored and managed to discover how to break the dimensional wall in order to travel to alternate universes, where he found a human using a computer while talking to his friends, after less than 10 minutes of talking, Discord decided to kidnap the human and force him to exist in a world where there is no going back. After Max appeared in Equestria, his entire body was transformed into a shapeshifting, emotion eating, insect equine that has, somehow, managed to make a member of royalty trust him more than she trusts her own sister in less than a week. Am I missing anything?

Yesenia Pestis, colloquially the Black Death has spread to the entire world, as of now. It has been mostly treated and combated with antibiotics, antibodies, and better sanitation. The most recent case of it that I know of was in Arizona, in the United States. The Europe of the middle ages, was hardest hit. Which is not the dark ages, by the way. (Dark ages is a colloquialism, and generally refers to the migration era, about 600 AD to 900 AD. Much earlier than the years you gave, so why are you bringing up the dark ages?)

But even if he is not, Cancer is generally treatable if it is caught early, with few exceptions, and even advanced cases of the Black Death are treatable with correct medical interventions.
If you understand them, the principles of an airfoil and an internal combustion engine aren't so complex that you need to have a perfect knowledge of them to make one that works.

You have completely over-thought what the sentence 'by the same token' means. It's not a physical token, but actually a metaphor for 'by the same thinking'. It's used when there are two similar events that can be explained similarly.
In this case, Luna will see Max's technology as futuristic, while Max will see Luna's magic as amazing/confusing/overwhelming, and neither would really understand the other if they started talking about it.
