Why has Applejack's character taken the place of Sunset Shimmer's?

I wouldn't necessarily say it's bad, but we (the readers) are missing a lot of backstory as to why Applejack came from equestria to live in the human world and where the heck Sunset Shimmer is. There's also the fact that the clop part in the most recent chapter happens WAY too early in their relationship (I tend to think a Jedi would have to have loved her at the very least a little longer before he gave up the Jedi way of not getting attached, even given the fact that he is only a Padawan and can use the dark side without going dark)
