If we are going to label the new characters one-to-one with the old ones, Zipp would be Applejack. She was the one who disliked lying to the ponies of Zephyr Heights, and is more calm and collected like Applejack tended to be. Hitch is more of the new Rainbowdash as any pony. He stood beside Sunny and the town as best he could and he can be a little over the top like Rainbowdash. Really, the only thing Zipp and Rainbow have in common is that they are both pegasai.

If we're going just by base characteristics then it'd go something like this
Izzy would be pinkie as she has the ability to break reality and is bubbly and friendly
Pipp would be Rarity, I guess, though we really didn't get much of her to say.
Zipp would be Applejack (and Twilight) as she's both academical and honest, but also Fluttershy in that she hates attention and also rainbow dash in that she becomes the new "speedster/athletic pegasi"
Sunny would be Twilight as in she's the one who brings them together, and the "nerd" of the group, though she has the athletic things down as well, I mean have you seen her skate?
Hitch would be fluttershy if you go by the animals, but Applejack if you go by the "responsability bit" but Rainbow Dash if it comes to bashfulness.
Really I don't think any of them are one to one. I just went for "jock character". Also note that she has "the look of a dumb jock" according to Spike, that doesn't mean she's a dumb jock. As you can see from the cover for the story she can get that look sometimes. Pure confusion.
