Ponies don't eat most meat because most meat are sentient. Equestrian marine life seem to not fall under that category so ponies consider them fair game.

You mean "Sapient" as in "can think abstract and is able to act with appropriate judgment, higher mental faculties and/or rational thought"
'Sentient' means 'having a basic awareness of itself and it's surroundings, can experience sensations and feelings'.
Virtually every land animal on earth is 'sentient' (dogs, cats, rabbits). They acknowledge pain and are aware of themselves. They are also able to make basic decisions.
The confusion of Sapient and Sentient is a mistake that ranges back into the Golden Ages of Scifi (50s), ever since it was falsely used to describe 'human level intelligent' alien species.
If you mean the animals in equestrian are partially sapient, then yes that is correct, it would be a very good reason for them not to eat meat. First of all they are herbivores, which does not mean they can never eat meat, but rather they were made for a vegetarian diet, and secondly most land animals are at least partially sapient (the level of intelligence seems to vary slightly here). That means they would kill something, that could actually talk back to them, if they understood their language, just as Fluttershy does with her animals.
That doesn't seem to be morally sustainable to them, just as it wouldn't work for us humans either, at least most of us.

No, I mean "sentient." Ponies are empathic enough that they would draw the line at "sentient" rather than wait until something is evolved enough to be "sapient" before deciding to not kill it for food. And yes, that means they would not kill "virtually every land animal on (Equestrian) earth."
Ponies have no compunction against killing mollusks, shellfish, and fish for their own food or for the food of others. As far as they know, those creatures are not sentient.
