So I found a thread talking about FIMfiction, and they happen to have a list of stories they recommend as a place to start,

I can personally say The Best Night Ever, Hard Reset, Mendacity, and Arrow 18 are all great fics, so the list is promising to me. Consider checking a story you haven't read, especially if it's in a genre you favor.

With season 5 over, it is time for people to release their reaction fics. I expect that this season finale will be fertile ground for fanfics for many months to come. I myself have some ideas, but I am going to try and push out a lot of stories I’ve got in my pipeline first.

Overall, my passion for this fandom has definitely cooled over the past few years, and even my enthusiasm for the endless possibilities of fanfiction has ebbed. Over this past year or so, I even started picking up real, non-pony books again (and finishing them!) in situations where I'd traditionally be reading a fanfic on my phone instead.

Hello again. This time around I've been trying to look for stories that got less exposure than some of the others I looked for in the hopes of finding some really good ones that might have simply fallen by the wayside. Unfortunately, that plan seems to have backfired since a few of them didn't really do much for me. However, this is why I haven't read other, heavily viewed stories with very large ratings. In fact, some of these stories had so few votes that they simply didn't show up.
