Well, I guess it was only a matter of time before an Equestrian version of the The Tale of King Midas was written.
I foresee the following events:
Sweetie will touch Rarity and be changed.
Rarity will lock herself in her room in the Boutique.
Twilight will try to help and either succeed greatly or fail so badly that Celestia has to step in before all of Equestria is turned to crystal.

I'm more of thinking that it starts out as immobile/ dead ponies then goes more towards actual Crystal Ponies as the story progresses- though something will go wrong.
