So, what the hell is this obsession with making Sonata be TACO OBSESSED? I mean, seriously. She reads aloud that it's Taco Tuesday at school. That's it.
Taco Tuesday is not a unique thing, nor did it involve her character at all past the damn moment when she sees the poster.
There's Taco Tuesdays in Irish Pubs. There's Taco Tuesdays all over the damn place. It's not special, not does it really have anything to do with the character.
She spaces out. She's slow on the uptake. She sings chorus. She sounds like she's Pinkie Pie's long-lost brain's evil twin sister. But the damn Taco thing. Seriously. It's annoying.
Do some actual character development if you write her. PLEASE. Not just: "But... b-buh, buh, buh Taaaaacooooooo Tueeeeeeesdaaaay!"
There's more potential there than being a Pinkie-wannabe with an imagined and forced-fan-fed Taco compulsion.

After muffins, cupcakes, and chimicherrychangas, are you really that surprised when this fandom latches onto a favored food?
As you yourself noted, we don't have much to go on with Sonata beyond "stupid," "evil," and "sings." Adding a love of tacos increases workable character traits by 33% before we have to break out the headcanon.

I just want to point out that there were no tacos in the cafeteria. Apparently, Sonata did not know what day of the week it was.
It's annoying, but most of this fandom feeds on memes like this. (To be fair, many fandom do this. Think "Sonic and his chili dogs" or "Hugh Dancy and his pumpkins".) At the very least, I can sort of enjoy cute, clueless Sonata more than damn "Derpy" and her muffins. God damn I'm sick of Derpy and her muffins. After all these years, and I can't think of a single story of her that doesn't have at least a mention of a fucking muffin.
Let's hope that sooner or later, someone accomplishes the arduous task of separating Sonata and tacos (before they permanently become her tacos). Is such a thing possible? Or will it be as painful as separating the top and bottom of a delicious grilled cheese sandwich?

Ah! Then I might have to give that movie a go. Have to admit the first one other than a few parts wasn't completely abominable. But if she's awwdorable [other than the Taco Tuesday thing] it might be worth watching.
As for Taco Tuesday itself the only time I heard that thing and didn't find it annoying or was apathetic to, so far was in the LEGO movie.

Why is it a problem? It's not like the fandom hasn't done the exact same thing with Muffins for Derpy, Cake for Princess Celestia, Burgers for Twilight, and, weirdest of all, Pinecones for Trixie (before they were eventually co-opted by peanut butter crackers).
Oh thank god someone else feels like this. I was so confused for the longest time about the taco thing until I went and saw the movie a second time... and even then I still don't get it. Derpy's muffin thing I don't have a problem with because I get it and people have done some pretty neat things with it, even in the beginning. But with Sonata it's literally all the same thing.
In fact, I once saw the new stories column completely filled with various Sonata loves Taco's stories that all basically had the same plot.
