Probably the same reason the first self-aware Bolo decided to smash through a pile of burning wreckage and blow the crap out everything on the other side instead of shooting a few missiles over the top. Looking at an official Hasbro map of Equestria, they are in a geographic position that makes attacking them extremely difficult merely because reaching them would be costly without even making contact with their military (assuming they have one aside from the useless Royal Guards). Their peace exists for two reasons. One, they have an excess of everything and it is all so easy to access that it might as well have literally fallen into their laps. Sometimes it does. Two, they are herd-based prey animals. The fighting within a herd is limited and no grudges are held to maintain herd integrity. Herds also do not fight one another. They also lack the aggressive instincts of predators. Thanks to their bountiful land (which takes no effort from them, by the way), they have nothing to compete over for survival or even for petty wants.
Actually, Equestria is a surprisingly realistic look at what a Utopia would require and might look like. Well, for a species that evolved with the above herd mentality. For a predator mentality, it would likely have turned out similar but taken a bit more time to become so homogenous and there would be guards for every town. Still, like I said, it is actually an interesting study.
Because surrendering to someone who makes it clear they want to eat you is a great idea.

If you mean exoskeletons then yes they do, they tend to be used in heavy assaults though. The standard armour is decent enough for what they're doing now, but just remember that they still have the matter of the griffon nations to deal with.

That would not even be a contest, considering the tech level of both the UIP and the Hundred Empires.
Seriously, the UIP has instant interdimensional/interstellar teleporters, along with other shizo tech (though I'm not sure to what level, since I didn't actually make this custom universe).
The Hundred Empires can travel between galaxies in a week or two, and across an entire galaxy in only a day or two. Their cruisers are about the same size as Covenant Supercarriers (and with many times the firepower), and they have super soldiers so powerful that they can survive a direct hit from orbital bombardment, and literally only five are allowed on any given battlefield.
