Well I plan on and am writing the next fic to be a more realistic account of Equestria's founding I'm actually not too sure if this has been done before, but I plan to make it a long story.
3146578 Stories on Equestria's founding have been done but that makes little difference. I've read a few from a long while back. Headcanons were borne from many things including the differing accounts of Equestria's history. The main point is I don't know your version of it which would make worthwhile and essentially unique. So I say go for it and don't worry about what's been done!
