After hearing about a nature spirit in the everfree I would suspect Isabelle to try and give offerings or some form of appeasement to it
You know I just had an idea for what spirits of dreams would be like for starters they would be slightly unpredictable being mostly friendly and mischievous but sometimes changing into terrifying monsters particularly around those that deserve it or more accurately in their dreams and potentially if one of them likes a person they swamp that person’s dreams with something they like but would be embarrassed to admit it. Like say a big tough guy has the attention of a spirit of dreams and that guy likes say cute plush toys he would probably find that every night his dreams filled with living plush That forcibly cuddle him.

That's actually a pretty interesting idea. And, well, Mlp does sort of already have a spirit of dreams. Luna created it to torment herself every night. The Tantabus. So maybe after they deal with the Tantabus once we get that far in the story and Luna forgives herself, it might become something along the lines of what you're describing instead of just being outright destroyed by Luna.

How does he keep it alive? If it is still organic, it needs nutrients and oxygen, to put it roughly.

Excuse me, you lived for more than eight centuries, made impact on technology development that can be compared with Moon crashing down on Earth, and you thought you can be easily replaced?.. That your disappearance won't cause major turmoil? So, yes, he was a fool, and Human Kigdom reaction to his disappearance is quite realistic.
And he didn't believe in... what? Him dying or disappearing?

His brain used to be kept alive via a complex life support system built into his body that fed it oxygen and nutrients. Now it's kept alive via a necromantic system that prevents the cells from dying. Necromancy isn't completely illegal, it's just heavily restricted in Gerhardt’s kingdom. So a lot of things can't legally be done with it, but that’s one of the things that can.
As for him being a fool. I see your point. Well, he personally doesn't think very highly of himself, as will be discussed in a much later chapter, so he didn’t view himself as all that important. He doesn’t even truly consider himself a real person, he views himself more as a machine or a tool for Mankind. And in his experience tools can easily be replaced, as can high lords.
Also keep in mind, while he may not view himself as truly human, he very much is. So he's not perfect. He makes mistakes. Some mistakes being larger than others. This would be one of his largest mistakes.
And he didn’t believe that he was particularly important. That's literally it. He knew he could die or disappear, especially in his line of work. In fact he thought that it was only a matter of time before he was inevitably killed. He just made the mistake of assuming that everyone else in the R&D branch would be able to choose another high lord just as easily as the other four branches when he finally died. That obviously didn't happen.
