I don't doubt that they have Thorns, but relying on hand wrappings isn't the best strategy. They could always use gloves or something. The stomata might not even be on the hand. It could be elsewhere like on the foot or tail (One poor sucker had his head forcefully pressed against the scapil, so now his stomata is located where his eye used to be). They might not have a Thorn at all, it could be a bluff.
Most Thorn users have no problem letting others know that they have a Thorn. But if they want to hide there is no way to tell for the average person.

As for the instant kill, I think it gives a warning first if you're about to say something, then kills you if you actually attempt to do it. As for the reason that activates it, I think it has to be from her herself doing it intentionally.
