Honestly, Rarity's story still leaves a foul taste in my mouth. The fact it seems to be heading in what could actually be an interesting direction is let down by the weak and cringe-worthy catalyst for this subplot.

It can also be taken from a japanese term that was brought over describing people who never have a stable job and are always looking for their 'next big break' as it were, especially if the term is used in a negative fashion.

7796337 Moonbeam, the Thestral Mare that Luna put in charge of caring for Rarity while she is immobilized in her full-body cast, has hypnotic eyes. It is a rare trait amongst Thestrals, but it crops up in a few Thestrals every generation. That, combined with their retractable canines, bat-like wings, nocturnal adaptations and reclusive society was part of what caused the Three Tribes to falsely label the Thestrals as 'Vamponies', believing the ancient cave-dwelling species of flying horses drank blood and burned under the light of the sun.
Because, let's be honest, in this setting, the ancient Ponies were absolute dicks to all and sundry for even the slightest reason.

Let's just say that Shining had a friends-with-benefits back when he was just a normal officer in the Royal Guard before Cadence took notice of his 'qualities' and used her influence to get him assigned as her 'Protector', and said friend-with-benefits was most certainly unhappy with Cadence for the 'theft' of her Stallion.
And I agree with you, Rarity's 'fall' still sits ill with me too, but back before I put the first chapter up, I'd sat down and wondered "If the Elements are really semi-sentient and are cogs in some unfathomable deific machine that even Celestia and Luna bend the knee to, and the loss of those Elements can drive one insane, which of the Mane Six, barring Twilight, would cause the most distress if she went off the deep end?"
I actually had lists for each of the five Bearers with pros and cons for them 'falling', and it came down to a narrow choice for Rarity, with her being, I felt, the one who had the most to lose under these conditions. Pinkie Pie, never quite the most stable Pony and already giving us one episode where she went off the deep end because 'nobody had time for a party' and what might she become if Twilight told her to get lost during a moment of extreme stress, came in at a close second, while Rainbow Dash came in at third with being blocked from the Wonderbolts sending her into a tailspin of depression and becoming suicidal, ending up relying on Scootaloo for a meaning for her life while could have ended up with mutual dependence between the two in a possibly toxic situation for all parties involved.
The 'Cake' disaster was, as people mentioned, poorly realized and explained, but ultimately I felt the overall plot behind it, that an accident caused an even greater disaster, and then made even worse because of Rarity's stubborn, selfish pride, would make her fall all the more aggravating for everybody, because all she had to do was acknowledge her mistake and the other characters would forgive her, but she just couldn't do it, she was too proud.
As I've said before, Rarity's 'fall' will be a catalyst for the Bearers to reconsider whipping out their Elements every time something goes wrong, because it has illuminated for them the hidden cost of using such power, that they are as much bound to the uncaring power of the Elements as the Elements are bound to only being used by their Bearers. And with Gryphonia on the border going into a meltdown over yet another Princess appearing and the rest of the world going equally nuts about it, just with less military tension, a refusal to use the Elements could cause a disaster beyond just a handful of Ponies going mad if they step out of some arbitrary emotional boundary placed on them by the Elements.

7797558 There's a reason Discord can't. I'll try not to spoiler it, but if Discord had done so right after he'd woven the Nemian Lions and the Rocs together to create the Gryphons, that would be one thing.
But it has been thousands of years since then, and the original 'Gryphon' hybrids are long since dead. If Discord went around 'undoing' Gryphons, he'd be separating single beings into two different entities who shared a single set of memories. The mental shock alone could kill them, and Gryphonia is barely able to support the various city-states that dot the landscape as it is, doubling the population would result in civil war for the already scant amount of resources and a tremendous loss of life would occur.
There's also another reason that a being who can literally turn reality on it's head just by willing it to happen doesn't just pop around 'fixing' everything, and why he didn't just kill or directly harm the Mane Six despite them being the only ones who could potentially stop him.
I can't really go into that more without spoilering, I'm sorry.
7797548 I don't have a problem with Rarity's fall itself, but the way it came about was very clunky and contrived.
A lot of the logic driving Chapter 49 was nonsense, and a lot of the drama from Chapter 50 wasn't very well set-up. Rarity didn't come out of it looking good, but she came out of it looking better than several others in that room. Her treatment wasn't just unfair, it was insulting, and I don't blame her at all for throwing it back in their faces.

Ah, finally an explanation for Rarity's completely uncharacteristic behaviour. I've been waiting for ages for you to delve into why Rarity was acting so wrong, all of a sudden.
So the Nightmare Rarity arc of the comics is also canonical to this fic's universe, just like the Return of Queen Chrysalis arc. While this is not exactly an explanation per se, at least it gives a somewhat plausible excuse for her shift in character. It doesn't quite fix the problem yet, but it's a good start. I'm interested to see where you are going with this.
I have to wonder, though, why Luna went back on her promise to guard Rarity's dreams.
