You could always make a small garden using some plants from the island; It would keep you busy and it's sort of related to farming.

What about Luna? Luna tends to the dream world and surely Applejack is dreaming. Luna could find her and let the others know that she's alive, and let Applejack know that the others are indeed looking for her and actually converse with her to keep her from losing her sanity.

That could actually make a good motto or slogan to boost your apple sales and probably leave a mark in Ponyville. If you sell canned apples (maybe you could: apple juice)

Sounds a bit off Applejack; there needs to be fewer words/syllables in the second half after the first word of the rhyming scheme for it to sound 'right', otherwise the whole thing is just...lopsided.
