It's a nice touch. Could have been something a bit more creative than being afraid of 'catching' what Gentle, Applebloom and Coral have, but it's reasonable enough.
My thought process was that though she was learned in some things, other things had her 'jump to conclusions.' It's a very human trait for some to assume something about other people or a condition they have.
Plus, I like to imagine Demure felt that in Manehattan, she was around 'normal ponies,' and that maybe, if she steered clear of where she grew up, the strange things that lurked in the woods and fields that hadn't possibly been defined, wouldn't get her.
it was also to show that in many families, not everything is perfect, and of course, now we're waiting to see if AJ's words had any effect on her.
That was one thing I really wanted out of this chapter: Applejack, who had been very condescending towards Coral over the barn dance growth of him and Applebloom, was telling Demure what she had learned from Demure's relations, and even pretty much telling Demure, "sorry, but you know, you may be wrong bout a few things."

Having read the latest chapter, I cannot help but feel a little disappointed by the reasoning Demure didn't want anything to do with her sister.
I mean, all this tme, she thought that what happened to her sister was some sort of disease? Why didn't anyone try and correct her on this?
