This was a great chapter, I'm glad that the others seem to be taking the relationship in stride. Unfortunately, this chapter's recipes will be rather hard to make, as I have zero baking supplies. I'll pass them on to my sweet-toothed friends though
The book said that the sugar was supposed to be added with the rest of the wet ingredients, and it later explained that adding sugar to the strawberries served to draw out the water. So did that mean that sugar was a wet ingredient because it made things wet? But that can’t be right. Something wasn’t wet because it made other things wet, they can’t attribute a property of something to the one that caused its state. Just because adding sugar to something made it wet, it didn’t mean sugar itself was wet.

It looks like when dealing with sugar itself, it most definitely is a dry ingredient. Even though its chemical compound is C6H12O6, the atoms are never arranged in such a way that H2O is formed.
However, when working with certain types of cakes and pastries, you can increase the amount of "wetness" in the mixture by adding sugar to the water. This is because when sugar is dissolved in water, gluten is hindered from forming (which is what you want for fluffy goods). Thus, it is only when sugar and water are combined in this instance and for this purpose that sugar is considered a "wet ingredient". All this just solidifies that saying I've heard that baking is a science.
