So, in Princess Twilight Sparkle's School For Fantastic Foals, there is the Apple family.
Quite a number of people have sent private messages asking for more stuff about Applejack and her two fillies, Hidden Rose and Ambrosia. (Both of which are types of Apples)
How much actual interest is there? I might do a short story or a one-shot, maybe, but as it stands right now, they remain as background ponies. (Sort of like Applejack 
)
I am baffled, actually, that two such minor characters have generated so much curiousity and interest from the community. I'm trying to figure out why. I think it is because they have remained relatively unknown and undiscussed, so there is more to the imagination.
The same reason we want to know more about background ponies.
We don't know about them, and they seem to have been important. So naturally, we want to know.
Curiosity likes to be sated.
It could be simply that so many foals in your stories end up being so interesting or integral to the plot that the mere idea that there are foals that are known but not important in some way is just strange.

Hidden Rose is good at Hide and Seek (which might just save her life one day)
and Ambrosia is good at making good tasting drinks?
It's in large part, I think, because of their connection to Applejack. Specifically, we wonder about their upbringing and personalities, likes and dislikes, skills, talents, training, education, and so on, because just as much as they inform us about them, they also inform us about Applejack, and Big Mac, and the rest of the Apple family, and even the friends of the Apple family.
You can often learn just as much about someone from the people they surround themselves with, just as much as you can directly from themselves.
i would love you read about them!
I love the idea of learning about new pony's.
I don't know about an entire seperate story but a chapter of interaction with Sumack and Pebble would be nice.

Also, they have a background where their parents are divorced (I assume so anyway - he's definitely long gone, but we never did hear their official legal status). We've heard Big Mac's opinions on this, but we've never heard about what Hidden Rose and Ambrosia think about it... or even Applejack's for that matter.
In short, there's a lot missing where you'd expect there to be more.

Ya until her foals are older I'm not sure how much fun to read about they'd be. Gotta imagine Applejack raised em like she was raised.
Think the intereest comes from the potential for story and character they have.

Best to try a one shot and see where that leads, I don't know much about them (don't think anyone but you does) so I can't really say.
If you don't think you have anything interesting to say, then leave them in the background.

Maybe readers are looking for a distraction or just are introduced to background characters and have an urge to hear about them now and again IDK. Sort of where the 'Slice of Life' ep came from I guess. To be honest I'd forgotten about AJ's foals.
My opinion is that if Applejack going to be a parental figure, or at least a family related one, in Sumac life, it will be good to include her and the family more. And besides, it add more character to Sumac's life anyway.
I have zero interest in Applejack's kids. I can't say why, but they just strike me as being Applejack 2.0. I hate Applejack. With a burning fury. I like Starlight Glimmer more than I like Applejack. I mean... Jesus, I hate Applejack.

Well, AJ is my favorite of the main 6, I wouldn't mind learning more about her kin.
I would vote in favor of a short, 1-3 chapter story about them.
4391795 Hey, I have an artificial exterior organ with tubing going into my body that keeps me alive. I worry more about batteries, tinctures, and mechanical failure than the average person.
I care less about AJ's kids than I do about AJ herself. Unless I missed it somewhere, I want to know more about AJ's past, as she's obviously a main character in the show and arguably one in your stories as well, in relation to Twi and Sumac. If it's been mentioned, I have totally forgotten who AJ's husband was, what happened to him, how they met, etc etc etc. I am curious about it and I'm sure Sumac wants to know, which is how it can be framed, by him asking :P
(Also I always hope for some AppleDash in the future, but that's just me being me >_>)
Kudz this is the MY LITTLE PONY fandom, we live for the lives of the liyttle background ponies ^-^. It's why the fandom is still going so strong in part, cause even the tiniest lil guys get appreciation.

I suppose they attract attention because
1. they are the only Mane Six kids.
How do they feel about their mom being a national hero? Do they feel inferior? Are they compared to their mother, and that drives them nuts sometimes?
2. their parents are divorced.
How do they feel about it? Who is their daddy? Do they have contact with him sometimes?
3. they didn't have much screentime (yet).
4. as you wrote yourself, they are rather normal in comparison to say, Sumac and Twilight's other pupils.
Their perspective on things could get interesting.
4392065 I may have an ingrained subconscious hatred toward the Southern accent. I really don't know why. Well, that and the fact that her entire character is HOWDY Y'ALL I'M ONNA FARM APPLES APPLES HARD WORK STUBBORN. Mostly though I don't like her because I'm a lying asshole from the northern states. I like to get away with my lies, and Applejack is my natural enemy.

A oneshot might be nice, or maybe some interactions with Sumac later on as they all age. The latter would certainly remind us that time is marching on, whether or not we see it happening.
I would like to hear more about AJ's spawn. I would not object to a one shot to learn a bit more about them.
