I'm no stranger to story ideas popping in my head, and having to write them down. I just tend to work on a single idea at a time and focus all my efforts on it, rather than try to write paragraphs for another story here or there. That way, I don't have a million fics unfinished at the same time. Wink wink. You people know who you are. 
That isn't to say I haven't made a list of ideas, and have had some thoughts of scenes for said ideas, or haven't done brainstorming... plenty of that has happened. And here's a list of what I've had ideas of, and what I'd like to work on:
Mood Wings sequel: Yep! I've had a few ideas on this. It mainly revolves around 
and 
relationship further down the road. In fact, the main thing about this would be meeting Derpy's parents. Twilight's in for a bit of a surprise! And yes, wings will play into this. I've a few ideas about what to do regarding dealing with wings. Not entirely sure where to go with it yet, though.
An AJ/Dash/Twi romance fic: if AppleDash is my OTP, AppleDashLight is my OT3. 
Yet there aren't really any fics that tackle on a three way relationship with these three specifically. I know of another one being written, but off the top of my head, I can't think of other ones. In this setting, TwiJack is a thing. Yet an errant thought (what that thought is/what causes it will have to wait until the fic happens ;)) causes them to consider bringing Dash into their relationship. It might take a bit of discussion and thought, but they don't have a problem with it... but what about Dash?

Those two are the ones I'd like to work on most. The AppleDashLight especially, though my editor and writing assistant, Macdjord, prefers mood wings. Pfah!
Here are more ideas I've had:
AppleDash Adventure fic: Think "Beyond the edge of the map", or "Lost and Found". I can't really think of many "lost in a far away land" fics that focus on Applejack and Rainbow Dash. "Cloudy Skies and Distant Lands" comes to mind, but it's on a hiatus since forever. In this fic - the cause of their being lost... is Luna. Why? You'll have to see. While the pair tries to come back from wherever they get sent (I know where ;) ), the rest will attempt to figure out how and why they were sent away, and hopefully, try to bring them back. Meanwhile, AJ and Dash encounter many things on their way home...
LunaDash fic: Yes, it's not AppleDash. 
I know girls, shocking! Anyway. The sonic rainboom is an old mare's tale before Dash first does it. Which means it must have existed in the past. And there are few ponies who fit the term "old mare" better than the two alicorn sisters... But it has been so long, Luna isn't sure she is still capable of doing one. Maybe with a bit of help from the current master?
(though I'm always tempted to put some AppleDash in here. I'll have to resist doing so 
)
AJ and Dash stuck in a time loop: Why no, I haven't recently read Hard Reset, and am totally not influenced by it at all! Whatever gave you that idea?
Time loops tend to focus around unicorns, or more magical ponies - and usually, it tends to only be one pony. Here, it would be two non unicorns. Why are they stuck in this loop, and how do they get out? Still figuring that out. But I think it would be a fun thing to do, depeding on the direction taken.
Applejack and Rainbow Dash as movie stars: one of the big Applewood studios is planning on turning a Daring Do novel into a movie, with the author's blessing. Dash is cast as Daring Do after an audition - and who better to play Daring's Companion/antagonist/Frenemy, Blondie, than the existing green eyed stetson wearing cowpony? Shenanigans then ensue, both on-set and off-set~
Flight Club - exploring the idea of ponies being pegasexual - attracted to pegasi more than any other race.
AJ finds herself going to a club of “wing appreciators”. Not quite a kink club but something more akin to having a fetish. She loves wings. Today the club has guests to demonstrate some wing-dances and other similar things.
One of the pegasi guests/performers?
Dash.
Cue a very flustered AJ, and maybe a private session between the two.
I think I'd want to keep this safe - no clop (or at least, not visible). Definitely worth some fun between the two, and it would explore more wing-based worldbuilding
Prodigal Daughters:
While not quite the Equestrian Games, there is a sub-set of inter-town games. The town picks one pony (of each gender, perhaps?) to represent their town in this athletic competition. Naturally, Ponyville chooses Applejack. And to her surprise, Cloudsdale chooses Dash (after all, who better than the current rainboom master?). Who will win!
Changeling Dash:
The climax of the Royal Wedding arch didn't go as planned. Chrysalis wasn't so easily defeated. The Mane 6 were carried off and forced into those weird coccoons. Thankfully, the tide turns, possibly with the help of Luna. The mane 6 are rescued in the nick of time.
...mostly.
Dash is no longer the same. How will others react to this? And how will she deal not only with her changed form, but to the discovery of how one of her friends feels about her?
And most importantly, can she be cured?

I'll say this. You have some of the most interesting ideas about deepening the culture in Equestria.

The idea's been vaguely mentioned elsewhere too. I know that O's "sex, lies, and cowpony hats" had a line about AJ using a featherduster during her alone time, and Dash joking about being pegasexual. Conversations on the appledash forums by yours truly were pretty much directly responsible for that.
I think rather than the homophobia that seems to be prevalent in many fics, or rather the emphasis on male/male or female/female attraction, it shouldn't really matter so much in equestria. Instead, the racial differences might be more of an issue..or cause of attraction ;)
Flight Club intrigued me the most, but that AppleDashLight... It's so hard to pick just one

It so hard to choose between Appledashlight and the Daring Do movie. I love the character of Blondie in What Would Daring Do, and would love to see Applejack try and act like her. I would read almost any story involving Daring and Blondie again. (Yes, I am currently reading the sequel, awesome.)
I'd say either the AppleDashLight, or the movie one.

Mine's intended to be Dash has been converted into a changeling at a later point ;)

These are all really cool ideas. All of them are awesome but I think the movie, the time loop and the adventure would be epic fictions.

Bingo! Reading hard reset reminded me a lot of that - it's a great example of a two-person time loop, though translating that into the pony setting would be an interesting challenge.

There is a shocking lack of it. I think I've seen one or two fics that were clop, but no actual stories with the three, unless I'm forgetting one. And of course, there's one I know is being written by someone else too. But other than that... there's a shocking lack.

These types of stories never made sense to me. If it was a few mixed or earth pony towns I could see it happening regardless of race. However when you have what is the capital of the pegasi joining what amounts to an earth pony competition is just seems strange. Apples to oranges for what kind of contests they would likely place importance on.
My own headcanon for the Equestria Games was that the teams were mixed with a lot of events being only a single race due to the inability or extra ability of the others. Some events could of course be mixed.
Oh goddesses, I would read almost ALL of those plots.
The ones taking my attention most being:
Mood Wings sequel, purely because that was some of the best AppleDashing I've ever read,
AppleDash Adventure fic, as I loved TheLotusTeaDragon's work on 'Of Clouds, Seeds And Apple Trees' and others,
Applejack and Rainbow Dash as movie stars, just sounds like an overall chance for comedy. That and I've just finished reading 'What Would Daring Do?'. Wow.
And finally Flight Club, yet another great oppotunity for romance and comedy.

Aye, finding a good game that would fit earth ponies as well as pegasi and unicorns fairly would be a tough thing to do. It's just potentially fun though. It's more of an individual thing, rather than what the equestrian games likely are - teams/numerous athletic minded ponies (with appropriate cutie marks) competing, rather than amateurs (which you could say AJ qualifies for - Apple cutie mark does not make her a professional athlete!)

Though a comment I make about your mood wings comment... It didn't really have that much appledashing at all compared to say, Felt Heart. The focus was truly on Twilight in that fic.

An AJ/Dash/Twi romance fic, this is only down to personal preference, but I've never got on with TwiDash or AppleDashLight. My brain was telling me they weren't a good pairing so it stopped me 'getting into' the stories. (You know the drill, internet. It's only an opinion

LunaDash, This one does pique my interests as it's far from a common ship. The story could be made sound too. The only thing I'd offer about it is, perhaps AppleDash should be left from that story?
AJ and Dash stuck in a time loop, another one that could be very involving depending on where the plot takes it. I feel it could benefit from a good couple of chapters as that could be a longer fic.
Flight Club (A bit more), now this one I like a lot as I've read a few fics (The names elude me right now, blah) that nod towards some ponies being more attracted to certain magics (Earth, Unicorn, Pegasus etc). I find the theory completely believable. Having a 'Wing Appreciation Society', for want of a better expression, is a class idea. I'd also completely believe Dash would perform there as, y'know, anything to massage that ego eh?
Prodigal Daughters, I'm undecided about this one so far. Maybe because it's still in it's early days of conception. I like the opportunity to see AJ and RD compete in various sports that may be out of each other's depth, leading to their opponent's delight and further efforts.
Changeling Dash, Another one I'm undecided about. I'm 'turned off' initially from it, but think that's because I've read quite a lot of 'Oh no! She's a Changeling!' fics. However, as this one takes a different turn maybe it could be different. I can't really comment further on that one.

Ah, that was my fault about the Mood Wings comment. I brain-farted and it didn't make sense.
I meant to say that it was a brilliantly put together story that HAS AppleDash in it. (I just woke up and haven't had my terribly English cup of tea yet).

I probably *would* leave appledash out of the lunadash fic. I'm just always tempted to put appledash in any story. ALWAYS.
As for the length of the fics, these wouldn't all be one shots. In fact, i have no idea how long any of them would be!
My vote is the movie one; getting AJ off the farm is, by itself, an interesting idea. Also starring Bon Bon, mare of a thousand voices.

Hmm...AppleDashLight...I really haven't read many fics about the formation of a three-way relationship. "Unexpected Confessions" actually introduced me to the concept of a such a relationship actually being a serious thing. But that went on hiatus.

While my favourite of these ideas is the Daring Do movie (which I registered in your poll), the Flight Club one is also very promising. The mental image of Rainbow Dash giving AJ a private "flap-dance" is quite enticing...
