I'm asking this out of curiosity: how are you able to sell your MLP fanfic on Amazon without getting nailed over the copyright?

Two reasons:
1. I'm a tiny minnow in the ocean. I sell a handful of books while Hasbro's licensed ones have minimum print runs in the thousands.
2. Fan-fiction is a bit of a grey area. As long as you don't get in their face, they turn a blind eye.

There are many pony works besides books out in the wild which could equally be considered in violation but they get a pass too. One animator though got in their face and got served a Cease & Desist. Bottom line – they know, but if you play nice, you can get away with this kind of thing.
