It's when everything works out super well for your character simply because he's that character. Everypony likes him, all his enemies hate him ,and those that don't like him are proven later on to be wrong. He's good at everything, he's acting the way people expect him to act, and he's completely overpowered. If you want a full explanation, check the writing guide on the site for the definition.
Well, I think his relationship with Fluttershy has kinda ruined him, honestly. I mean, maybe if you are able to find something for Noble Blade to do that fleshes out his character more than MAYBE he might be better, but Firestorm and Freedom will forever be better and more intriguing characters to me.

If it makes you feel any better, I never thought of Noble Blade as a Gary Stu nor as a completely one-dimensional character.
If anything, I actually found him to be one of the most relatable ponies I know, because he and I both want to make sure we’re doing the right thing and want to fill others with joy. Next to Firestorm and Freedom, he too is an intriguing character whose development gets better and better with each passing chapter. Plus, the romance between him and Fluttershy makes me feel as light as a feather.
