More like their emotions are dulled. Witchers in both books and games are clearly emotional, just less so than normal humans. Or perhaps their traumatic training dulled their feelings rather than the mutations and they only think they lack emotions. Geralt is generally unsure about whether or not witchers lack emotions or if they have just heard it so often that they grew to believe it themselves.
