Not quite. We're like 70% water, and when water turns to ice, it expands by some 9% of its volume. That's enough to destroy tissue - it'd be akin to inserting billions of tiny blades all throughout the body. No coming back from that. One of the reasons cryogenics is so difficult, is that you want to keep the body as close to 0 °C as you can but without actually freezing it - and then maintaining that temperature over the long-term period (with as little variance as possible).
Another issue you have to overcome is, for lack of a better term - re-heating. There's currently no known method that heats deep tissue quickly enough without destroying shallow tissue (like skin) - you'd have your subject thoroughly burned before long. They did experiments in the early days of the microwave (back then called diathermy - this is the 1940s we're talking about), and the biggest thing they could reliably revive was a hamster. Anything bigger than that didn't work, and it's currently understood that it wouldn't have worked.
The human (and, I assume, pony) body is simply too big.
Now, this universe has magic in it, so there's a chance it might actually work... but he'd have to set out with profound understanding of a number of fields to even begin research in this area. Considering his potential lifespan - he'll probably succeed one day (and this technology shall be shared by all, of course)... but I doubt it'll be soon enough to preserve these particular ponies.
