Actually Mephala and Beoathiah ARE evil daedras. One is prince of murders and secrets and the other represent treachery and deceit. They are worshipped by dark elves but only good daedra from the trio is Azura. And the others are Meridia, Nocturne and possibly Jyggalag.

Ahead: Sleep-deprived lore nerdery.
It's not really accurate to call any Daedric Prince good or evil. They're not so much people as they are concepts & values given sapience. We don't (most of us) call farmers evil for butchering cows. The cows might see the farmer as evil but, conversely, the people he feeds with those cows rely on him to live and so see him as good. The Daedric Princes aren't grouped by how good or evil they are but rather how good or evil their followers typically are. Boethia and Mephala, to use your examples, don't just favor bloody-minded murderers.
Boethia values strength and the resolve to impose your will upon reality through any means necessary. She looks with equal favor upon the conquering tyrant who takes power through bloodshed & betrayal and the noble hero who accepts whatever pain or loss he must endure to fight the aforementioned tyrant and defend his people. She doesn't care what you're driven towards; she just cares that you have the drive to pursue your desires and the strength--of body and mind--to make it happen.
Mephala, for her part, values guile, subterfuge and discord. She appreciates those who understand what a few carefully timed and precise actions can add up to. The way events interplay. In short, she loves it when a plan comes together. She'll take an unscrupulous businessman who dominates the market through a few well-placed bribes and the framing or murder of competitors as readily as she'll take an assassin or group of conspirators aiming to depose a usurper and restore the rightful ruler to power.
Likewise for "good" Daedric Princes. Meridia despises the undead and those who practice necromancy (not strictly always "good" but generally so). Her sphere is light, life and energies. She aided the Ayleids, an empire of slavers who were into some truly atrocious things (they had an entire city dedicated to turning slaves into literal works of art that went by names like "flesh sculptures" and "gut gardens'), because the Ayleids revered light to a religious degree and were incredibly accomplished in the magical arts. She didn't care what they did on their own time. She just cared that they revered the things of her domain.
Same goes for Azura. She aided the Nerevarine in their quest to slay Dagoth Ur, sure, but she didn't do that because it was the right thing to do. Azura is, in addition to twilight, the prince of vanity & ego. The Nerevarine prophecy isn't about her bringing in a hero to save her people because she's a caring mother figure. It's about her seeking final retribution upon the Tribunal for breaking an oath sworn upon her name, and then only after thoroughly punishing their followers for guilt by association (and, presumably, for their coming desertion). The Nerevarine may be a hero to the people for saving them from the horrors of the Blight, Dagoth Ur and a new Akulakhan, but for Azura they were just a hammer with which drive in the final nails of the Tribunal's coffins once they were sufficiently weakened.
As Azura and the Box similarly demonstrates, nothing pisses her off more than being defied or shown up and she can be extremely petty when getting even with the offender. The Tribunal not only did both but did them to the extent that they stole away many of her worshippers while relegating her to the role of an "anticipation"; that is, a stand-in until the real deal came along. In response, she not only conceived to have all their lies exposed by the reincarnation of the very hero they betrayed but to reincarnate him into an outlander, of all things. Being the proud leaders of a highly xenophobic people, that was particularly insulting. All the good things she orchestrated were first & foremost revenge for an ancient personal slight. It was ego, as is within her sphere. The positive image it created for her in the eyes of the people was just a secondary benefit, though it likewise played into her complimentary domain of vanity.
The only truly good Daedric Prince is Sheogorath. Other princes give you staves you'll never use and gimmicky weapons that are as dangerous to you as they are to the enemy. Sheogorath gives you an infinite trolling stick & cheese. Everyone loves cheese.

sounds like Discord and he is not evil. he likes to pull pranks and laughs at the ones affected. the Daedric Princes are essentially the same.

can't forget Sheogorath. he is like death, he is true chaotic neutral. when he shows up it is a true 50/50 chance. if it amuses him he will help you but if it amuses him more he will make you suffer. it is all about his mood in that moment.
