I'd be all for it, but I'd have to take time zones into account.
Depending on your technical competency, you might find it easier to stream your writing through a Twitch session (although usually associated with games) using open broadcast software.
Apparently it can also do Youtube live sessions and a few others, so you could look that up, but yeah, that might be an easier way. You can run the chat window on another screen, rather than trying to work with Skype's very limited number of concurrent callers.
