A katana is remarkable in that the forging process is intended to make a functional blade out of iron of such amazingly low quality that it would otherwise break if you looked at it funny. Japan's supply of iron is largely of incredibly low quality and rife with impurities. A good swordsmith's weaponry would have less impurities and therefor fewer weakpoints and faults than those of a mediocre swordsmith or armorsmith. Therefor, a well made sword could concievably break a poorly made one, due to the quality of the iron.
It's not because Japanese smiths were just THAT good, nor is the design just that much better than any other. It's very effective against flesh and leather but then so are scimitars and any other curved blade designed to slice during a slash.
6488692 For what they had the Japanese managed to make pretty good blades for what they were used against (like you said flesh and leather) the knight vs samurai is a pointless debate seeing that they never met and the blades any country used were made for the armor said blade was to be used against. Hypotheticly If knights did ever fight samurai then Japanese blades would look different and maybe European blades as well.
