This was an idea I had regarding Sunset, and used it for my Power Rangers Starfleet: Sunset is volunteering at the hospital, and she soon discovers she has quite a knack for small medical procedures and helping people, which brings forth the idea...
Eventually, the kids would all graduate from High School. They can't really stay at Canterlot High forever (Unless of course they become teachers)
Fact is, all of them know where they're going and what they want to be when they grow up into adults, but what about Sunset. Sure, she and her friends are a police patrol with their super powers, and while they may or may not get paid for it (I never decided if they do or don't... I don't think). If Sunset wants to maintain her life in the Human World as the Pony Ambassador, she ought to have a career of her own.
This idea kept getting to me and wouldn't let me be, so I did all this.
I think Sunset would make a great doctor, especially with a little magic to help her. She's come a long way since she was evil, and she's learned to be gentle and kind to those who need and deserve it, and this way she can HELP and HEAL people, much better than when she wanted to RULE and CONQUER people.
GOOF: Using Human Applebloom as her patient was about all I could find because she was the only perfectly posed picture I could use... but naturally, since Sunset is an adult in those pictures, Applebloom would in fact be a little bit older herself.
Still, this is just my idea.
What do you think you'd like Sunset to be in your own verses? Try it out with some fan art or fics.
At some point, maybe go back to Equestria, make up with Princess Celestia, and maybe help Twilight with friendship problems.
I can't see Sunset staying in the humen world once the Humane 7 graduate. Heck I think the only reason she does stay is to finish high school.

Sunset is the pony ambassador, just as there is a HUMAN from Earth who lives in her world now as the ambassador of Earth
This is rather nice really. Sunset is smart so I think she could excel at any job she set herself to. If not a medical doctor then perhaps a therapist given her own checkered past.

Or she could even be a Cop... and help fight bad guys, knowing how dangerous they are (Being a former bad guy herself)
She could even be a teacher, and teach humans about the other world, and be a pioneer in helping to join the two worlds together in an alliance.

I mean She's already a heroine and helps to fight evil, and now she can try and help people, and she can TEACH children about health and nutrition. So she's literally, a Doctor, a Cop, and a Teacher all in one
