Who and why?
For me, Kirin. I feel they're the most unique species introduced so far, that aren't tiny and just one-offs. It helps that Autumn Blaze is the most endearing non-Pony character we've had so far, in my personal view.

The Changelings, after their introduction in the season 2 finale there was a lot of room for headcanons, especially about the possibility of multiple hives existing. Even after the season six finale other hives can still exist though some of the headcanon was broken due to what was shown in the season six finale.
Love kirin just way of life
Gotta say the Changelings for me. I love how much of a mystery their culture is, and how much of a mystery they are in general. Literally anything goes with them, so you can create sprawling headcanons and theories that could all be possible within the limits of the show, or go even further beyond. Some of my favorite stories on this site are entirely based around Changelings and their conflicting issues with Ponies and the rest of the world.
Second favorite is a tie between Dragons and Kirins.
I would also say the kirin that all honestly deserve more in spotlight of the show. Like the changeling there so much that left unsolve.
Funny enough, I do like Kirins. I'm creating an Kirin OC for a story to introduce them earlier because I felt like their introductions this late to the series just felt like missed opportunities to explore more on them.
