Readers might be more eager to see the rest of the mane six, Sunset, or Starlight, plus anyone else I might add on a whim, so I can't make any promises, especially since Spike just traveling around to lay women might get too repetitive and stale for me; still, I'd like to do so eventually, but might need a break especially since like any series the ratings have diminishing returns!

If you need plots I kind of have one lol, word spreads of a diplomatic dragon and it soon reaches Luna and celestia, they send for him so he can help negotiate with them and the dragon lord over territory, same can be used for the changelings if you ever want to hook chrysalis up with spike, easy way to get anyone from canterlot into the story.

I'll keep it in mind but it's unlikely it will play out like that, as I'm thinking Celestia and Luna are so powerful in this world they don't typically interact with anyone. Chrysalis I haven't considered much as I don't want to get ahead of myself; try to keep my options open!

Hmm, well you can always use Sunset and Starlight as members of the coven during a return visit.(I assume Spike will visit them again) though I'm personally interested in Rainbow Dash.

If I may use her appearance in Dungeons & Discords as inspiration, I would say that after Spike returns from the Coven, he is informed by his harem that the ruby Rarity gave him was stolen by a notorious thief and goes after her.

He catches her, only to realize that she has already sold the jewel, which awakens his Dragon instincts, and rutting her is the only thing he can do to avoid killing her.(it'd lead to a nice moment-of-doubt Character Arc when he comes to his senses)

Now quite addicted to his sperm, Rainbow Dash then helps him track down the ruby's buyer.

Off the top of my head, I can see Tempest as a warlord being the buyer, though I could probably think of others given time.

...I just realized I got way too carried away with this idea(I just wanted to say Rainbow Dash as a thief and the rest wrote itself.)

Probably won't add anymore major characters to the coven; definitely not Sunset as I have another idea in mind for her. Starlight I haven't thought about much yet.

I do like your ideas for Rainbow Dash, though I was thinking something a little different so I might meld the two concepts. She's also tied with Applejack as admittedly my least favorite of the mane six, and as a result they're both characters I really struggle to write, but I will get to her eventually!
