I still don't get why the MC refuses to make any sign that he can understand what is being said around him. He was a fully grown man before he became a pony, so why the hell does he not act like it? I mean, I understand hormones and shit, but he acts like a stupid kid for what? To get at tits whenever, even though that wouldn't change if he was found to be intelligent?

I suppose there is that. However, the longer he continues to pretend to be just like the other colts, the harder it will be for him to break out of the mental pigeon hole everyone is placing him in.
I can actually see an incident bringing his intelligence to light, and how everyone reacts causing Gold Coast to believe that everyone, including his mother Celestia, sees him as nothing but a stud, and that his mother only loves him for the blood ties he will bring with the ruling families of foreign countries, and not Coast for himself.
And it's not like he wouldn't be propositioned to believe that either. Just before she had his sheath removed, Gold Coast heard his mother say that the tradition of circumcising the stallions began because she wanted to feel more pleasure from her mate. As such, Coast's missing sheath would be a constant reminder that he is seen as having no other purpose but to pleasing mares. A reminder that will remain and would be a sore point between them. The only possible rebuttal to this reminder would be if Celestia could somehow return Gold Coast's sheath to him.

You know, rereading this it becomes apparent that while Gold Coast is trying to enjoy his new life, he is slowly starting to think about his situation. Currently it looks like he is focusing on the fact that he will watch most of the people that he grows to love grow old and die, including his new brother. I don't think that will last though.
It might be pushed to the edge of his mind while he contemplates the implications of his immortality for now, but Coast is slowly beginning to form a .picture of where he stands in his society, and I do not think that he likes it.

You would be surprised. Parrots have beaks yet are still able to mimic words and phrases that they hear. As long as a creature has a motivation to do so, they could come up with a reasonable approximation for speech.

Not sure but I have a few guesses. They are probably just extremely powerful males that used their power to do as they fancied.
For example, Discord would probably be just a powerful creature that warped reality for his amusement. With the mind of a beast he would not understand that he was hurting anyone. So he's not necessarily evil, just powerful, indifferent, and extremely dangerous.
From what was mentioned concerning him, I suspect that Sombra was a bit different. With the physical differences between stallions and mares, it would be very easy for an unruly stallion to harm a mare, up to and including trying to forcibly herd them. This is probably why the mares are so nonchalant about the concept of gelding, though with the difference in birth ratio it is more likely that most instances of the practice are temporary until the colt grows up and can be placed in some form of obedience training to curb their aggressive tenancies, during which their balls are grown back.
Based on what little was said about people and events concerning him, I suspect that Sombra was an example of a highly aggressive stallion with an extreme herding instinct, backed by an unrivaled level of power. He most likely forcibly herded and bred any mare he came across, crushing anyone and anything that attempted to defy him. It would certainly explain the 'Bastard Cull' that Candance mentioned. The mares would have been terrified that Sombra's sons would have his power and aggression, ultimately following in their father's hoofsteps, and that the daughters might give birth to a son who would do the same.
Thinking back on it, some of those who would have agreed with the "Fat Hippo" and her friend's comment that Celestia should remove either Gold Coast's horn or wings would probably do so with fear of what such a powerful stallion could do in the back of their minds.
