I didn't mention her martial arts skills mainly because Galen knew nothing about it, so it would be like giving out free information for the most part. As far as her response, she's a martial artist, not a brawler and she was caught off guard by not only Galen's readiness to fight, but his taunting as well. Lero never picked fights and only retaliated after some very serious provocation. As far as how it was handled, Galen's no stranger to scuffles like this while Honeydew would be. Grappling is generally not a major thing taught in martial arts schools unless they are a major element of them (Judo, Jujitsu and other similar styles), so she would be at a major disadvantage.
As far as her reaction to Galen goes, she's actually mad at him due to his little stunt with Applejack. Honeydew (in my head cannon) would have a thing for Applejack since she's basically the epitome of what a earth pony mare can be. Basically, she's up on a pedestal and when Galen said that, she lost it because that's partially how she felt about Applejack.
Basically, she was just trying to intimidate Galen off since her initial tries at discouraging Dash's relationship didn't work. Trying to scare the stallion away (who tend to be more wary of confrontation than mares in this type of setting) instead of the mare who would be protective of the stallion, hence the entire scuffle and debacle involving Chuckwagon. It also doesn't help that she has a lot of unresolved frustrations involving Lero and his herd that she hasn't dealt with and Galen would be a prime target for her to vent at.
Honeydew isn't a settled matter, she'll be back later. This was just an opening salvo for her.
(Also I completely approve of the whole love/hate theory. They're both emotions tied to passions and it could have turned to hate after she tried getting Lero's attention and having her hopes shattered by Dash in a single kiss. We just don't know for absolute certain what was going on in her head and I'm just trying to make what I can through my own reasoning. I mean, even her sisters alienate her somewhat so that they can get back on with their lives. That has only got to add to her anger and potential sadness...)
The main reason I brought it up is that Honeydew is an Earth Pony martial artist. That means that the styles she's going to have, by Xeno canon, emphasize strength and endurance as their primary tenets. In fact, Rainbow Dash is exceptional in that she knows SOME Earth Pony martial arts, which normally preclude pegasi from practicing them due to their frames not being sturdy enough. I THINK (it's been a while) that the martial art that Honeydew practices is Rolling Rock (Boulder?) again, I could look it up, but I'm writing this as I get ready for work. There really have been no practical discussions as to what earth pony styles look like, but from the limited discussion I've seen, I'm thinking very similar to hard body styles on earth.
Which means that, at the very least, at least at first, Galen should note how frenzied and powerful her struggles are. Not to mention, she should be built like a brick shithouse. I doubt that ANY pony martial art deals with clenches or locks that well, seeing as they just aren't going to run into many opponents that are capable of those maneuvers. Griffons probably only pounce things to bite and rip the shit out of it with their claws, so training in dealing with that would probably emphasize "don't let it happen". Minotaurs might, but they strike me as being much more inclined to slam the shit out of something then try to pin it to the ground. The point being, that it might be entirely possible that even as a trained martial artist, Honeydew has no practical idea how to escape a pin or lock. That doesn't change the fact that she practices a martial art, which does shit to your body and your reflexes and muscle memory, stuff that savvy character like Galen might take note of.
Again, these are just observations, I wasn't saying the scene was wrong or anything, just that it's things to keep in mind. I am well aware that martial artists can be caught off guard and get their ass kicked by a brawler, especially IF they've only ever fought in tournaments before. I've seen it happen once or twice.

I know what you were trying to convey and was just explaining my reasoning behind the overall scuffle and how it turned out If it seemed like she was overpowered easily, it's because of his anger, physical strength (which would be enough to lift her bodily) and what is going on with him as far as his channeling of seemingly random feelings and the oddities surrounding his first forging in Equestria She did use one of her techniques to trip Galen up though, but he didn't see her as she came in from behind. It would have been one developed to topple bipeds (or taller opponents in general).
As far as her style would go, I would imagine it to be a momentum transference style where one would "roll" their body into fast, highly damaging blows (like shoulder checks, whip-like strikes from their limbs and counters that would roll with a blow and use it to help fuel their retaliatory strike) that would stagger opponents and use quick, rigid strikes to incapacitate foes once they've been worn down or toppled

A martial art that used the weight and power of an earth pony to advantage like that would also be very hard for Rainbow Dash to emulate, what with her weighing practically nothing. If I recall, she actually stated outright that she just didn't have the mass and build for it, but that Derpy did. So that reasoning makes a lot of sense.
I think I'm going to adjust my head canon a bit. I like that momentum transference idea... it works really well for an Earth Pony style.

Onomatopoeia is a tricky thing, especially involving accents I pronounce letters and their combinations a bit differently than you probably do, so when I say a word, it probably sounds completely different.
