Personally, I'm okay with how you wrote Sunset and Celestia's reunion, but if you really feel like it, I won't complain if you do the revisions. And if you don't feel like it, well, that's what the AU tag is for.

That would involve spoilers of Forgotten Friendship. Once you’ve had a chance to see it, you’ll know exactly what scene I have in mind.

But seriously, not a lot was jossed in the sense that canon disagrees with your stories, more it just kind of adjusts the timeline a bit. The show's Celestia-Sunset reunion was slightly different than yours, but they both hit the same high notes. I know a very good author who writes an integrated universe set 10 years after the end of the show, he's always having characters "come back from a trip" after the show introduces them.
Yours is still a quality piece of fiction. I bet Cook would be in charge of returning memory stone fragments to Equestria and requesting access to any and all records related to the portal.
