Exactly what it says on the tin! I have stupid plot bunnies running in my head!
OK, more context, but be warned, this blog post contains M-rated topics, so you'll need to open the break if you're of legal age to view M-rated material. If not, this blog is not for you.
If you had rummaged around my library, you should have seen a bookshelf dedicated to LightningSword's "Steam Collection", which consists of, well, steamy stories in Equestria Girls universe. But his is not the only series like this I am familiar with. I have also seen Harms Way's "Erotica Girls" series and Grasshopper Keller's "Reunited" series as well, and I have to say... all these series are actually good. If I had to recommend good clop, it would be these. I've also been enjoying "The Rarest of Them All" by Enclave2277, another good humanized Spike/Rarity fic in EQG universe with a relatively paced build-up of feelings...
...aaaaand that's when everything went downhill.
You see, I have never tried to write a romantic story before, but I have a project that intends to have romance; unfortunately, I have run myself to a self-doubt regarding my capacity for writing romance (being a 22-year-old nerdy guy who still hasn't had his first kiss yet does that), so I thought I needed a test project of sorts.
And my brain began popping out plot bunnies like rabbits on aphrodysiac! Stupid brain! Now I can't choose! 
So yeah, I'm asking you for help.
The test story I am planning to write involves an OC attending CHS falling for one of the Humane 7 and a relatively slow (I think the story will be multi-chaptered) build-up of romance between them which eventually culminates to - oh come on, you know already what will happen in the end! (Clop... I have no shame 
) Depending on a chosen girl, the OC will have different characteristics and backstory. But I can't choose a girl from the list of those that my brain spawned plot bunnies from hell. The list is as follows:
1) Applejack;
2) Pinkie Pie;
3) Rarity;
4) Rainbow Dash.
Twilight and Sci-Twi are out because Flash Sentry, Sunset's out because I also recently started shipping her with someone else, and my brain couldn't imagine a plot bunny for Fluttershy.

I honestly have no idea whom to choose.

Well, it depends on what your OC's character is going to be like and what kind of relationship you're aiming for. Are you going to write a relationship where their personalities clash together with many differences, but they still get over it and stuff, or where their personalities are rather similar and they can enjoy some things together? If you decide on a final character for your OC, then I'll place my vote.

I kinda did not want to uncover the characteristics of the OCs I planned, but, on second thought... If you don't mind, tell me whether you'd like to receive a PM from me on this.
I think it's somewhere in the middle of the spectrum, with a swing to one side or the other depending on which girl is chosen and on the plot progression. As I imagine it, each OC will have points on which his chosen girl's views will be similar, and points where they will have differences. Relationships are complex, and I do not think it would fall strictly onto the line between argumentative and non-argumentative.

Having written romance stories before, it's genuinely not all that difficult to do. I mean yeah, it can be easy to get wrong, but that's only if you're rushing things to the point where they don't make sense. Here's some advice I can give:
If you're starting a fresh romance, the best way to get them to develop closely overtime is to imagine them as friends first. Just imagine how two friends get closer over time. Then add in droplets of physical, romantic, or sexual attraction that they start to notice over the course of the story. Let those feeling develop naturally and let the characters come together through situations that feel natural. And then when they do get together it'll feel more like a genuine and solid romance together rather than something that was forced or rushed.
Though if what you want to do is go the "Oh I don't really know her but she's pretty so I ask her out route", that's a little more complicated and I don't have any experience with it. You are also more likely to get a relationship that doesn't last as long or is as strong when you don't go into one seeking 'a best friend you're in love with' as opposed 'Let's see if me and this hot person could fall in love'. But I can think of some ways for it to work out.
Focus on the dating component for sure. Have the person ask the other out (in this case I'm assuming guy asking out girl) and have a conversation about that (do they accept, do they need to be convinced, that sort of thing). Then focus on the dating first, a first date should be about getting to know the other person more in depth first so light conversations about hobbies, interests, that sort of thing. Depending on how well first dates go, it can go anywhere from 'That's the end of dating' to 'Well we spontaneously jumped into bed together', but it all depends on how strong the attraction is. I assume you don't want any shenanigans till the very end of the story, so if a first date goes well a kiss could work out.
From there you slowly ramp up the togetherness, likely hanging out at school, hanging out after school, a few more dates, getting to know each other on an intimate, personal, and social level. And then they can talk about where they want the relationship to go after a while and things could naturally develop into the bedroom.
All the girls are different as well, each one has their own needs and desires and basically needs an partner that will keep those in mind. Like AJ will likely be more traditional in terms of marriage partners, especially considering she will likely be working on the farm her whole life and will need a husband that can help with that. Pinkie would need someone who can keep up with her constant energy, Rarity would need a companion that she can rely on (even if not directly related to her fashion interests), and Rainbow Dash would need someone who can make her feel that being in a relationship is worth it (regardless of if you see her as Dom or Sub in bed).
These are all things to keep in mind when writing romance stories. I've written three types on my FimFic now. One where the love started out one-sided (Too Shy for a Rainbow), one where they were already in a relationship (A Hearth's Warming Date), and one where it started from scratch (Hunter's Story), so if you ever want help bouncing story ideas or if you're pacing is right I'd be more than happy to help you further.
I'm sure you'll do fine with Romance, you just gotta trust yourself hehe
