But seriously, I just did a one-shot, I used up my 'idea for the day' (and yes, it had changelings in it).
Gwar invades Equestria with the Scum-Ponies of the universe. My vote.
Okay, really serious now. Roll 1d6 + 1d100, keep rolling until you get a valid episode number. Watch episode, examine background ponies and write a story that fits them into the event.
Tirek being turned into a filly then is adopted but is eventually captured by changelings

3871426 well one-shots are only one chapter but people never say the limit for the amount of words so it can be complex if it wants to be
3871431 If it helps, my chapters tend to be 2k. I can go a bit longer for a one-shot, but beyond that, I tend to break down and cry and end up going back to episodic.

Damn you could even have a pony and an entirely different human switch bodies through it and then gain amnesia or some voidic type of influence that would make random stuff that had impossibly small chances to happen become probable like cloning themselves!
Sunset Shimmer visits Twilight Sparkle to assist her in explaining Schrodinger's Cat to ponies. Fluttershy freaks out. Chaos ensues. (or something)
I've had this idea kicking around in my head forever, but I fear I will never write it.
I like one shots involving time travel. How bout Twilight has a time travel accident and has to use disguise magic while she looks for a way back to the right time, but fails to do so and through wacky shenanigans ends up as her own Aunt that filly Twlight totally loves and after her young self has her time travel accident Twilight sheds her disguise and then tells her short story and then finishes with some sort of pun.
What was that shady stallion planning to do with Pinkie's Party Cannon?
Hmm, Pony Pinkie meeting Dream Pinkie meeting Human Pinkie in Twilight's shiny castle. Location is debatable.
Maybe even throw in a Pinkamina.

A few ponies and I were throwing around ideas, and we came up with a short idea for Version A, as an example:
The Ambassador to Equus is returning home to Equestria after having spent a few decades there, becoming a young adult pony in the process of their duties. They have regularly taken trips back, but intend to permanently return to Earth, to spend the remainder of their human life with their family while they are still around and not be a permanent refugee stuck in Equestria once they gets too old to safely return.
The ponies they had developed friendships with, beg them to stay, and not go. To bring their family to Equus instead, so they can live a much longer life.
How about a sequel/epilogue for Roots of stone? It had a very sudden ending and I'm sure there are many of us who would like to see how Maud and Tree manage to readjust to Equestria again.

Well, how about the utter madness of a changeling fleeing from pursuers... And running right into/through the Smooze? Smooze-face is magic resistant... Changelings use magic for just about everything...and the general populace (chasing a changeling or not) normally avoid smooze-face stuff like the plague. Awkwardness ensues!
Besides, I'm certain Discord could feel ~that~ crackfic all the way at Fluttershy's cottage... Cucumber sandwiches and tea, notwithstanding.
A tiefling from Everglow falls through a portal to Equus. Hijinks ensue.
Yet another Twilight clone (in the vein of Sunset Shimmer and Starlight Glimmer) named Crepuscular Scintillation appears with a nefarious plot. The unicorn's schemes have a few holes, however.
Ooh, if something hasn't been chosen yet then how about Pinkie discovering 'The Song That Doesn't End' and it's effect on Equestria and the music magic?
