Did it ever happen to you that there was something you were so looking forward to do you had a hard time doing anything else? That's exactly what's happening to me.
I WANT to write the chapter with Sweetie Belle slaughtfighting Genocide Frisk.
I just CAN'T wait to write it.
And because of it, I have a difficult time writing the next chapter of the story. As soon as I start focusing on writing, I start to think about this fight and to get new ideas of how Sweetie will kill Frisk. Heck, I even think about it when I don't write, and I even dream of it.
I'm just OBSESSED with this fight! It's horrible! 
It was still okay back when I just wrote the preview (which will be slightly different) even if I had to physically restrain myself from just writing the whole fight. But since I finished writing Sweetie Belle's adventure during a Pacifist Run, I'm losing my mind!
So I ask you this: what should I do? Would it be okay if I write the fight in advance? Maybe as a separate chapter or in a blog post? The advantage is that there shouldn't be any spoilers about what happens between the current chapter and this one, so it is totally possible for me to write the chapter now without ruining her other adventures. Then I would add the chapter to the story itself once I reach its point (which won't be before some months).
Just make an omake, Or have it be her visiting at an unspecified time and messing with the song of time or something.

You can write it and then just not publish until the story actually gets there?
I understand your eagerness to write that chapter of the story. Maybe you can go ahead and write the fight as a chapter, but wait to publish it until the story gets to that point. That way, you won't have to think about writing the genocide chapter as you work on the rest of your story.

Eh, Death Blossom (Google it) would just phase through the floor, instakill on contact with no chance to avoid, and then claim their SOUL to stop the RESET ability in its tracks.

There is still the problem of the SOUL immediately breaking upon death. The SOUL would need to be absorbed right out of Frisk's still living body, and as the game said, it will ask a huge quantity of energy to do it (maybe even more since it's a (partially) human SOUL and not a monster SOUL). The question is: do they have enough energy? Are they powerful enough?
I would mostly see the fight in a separate story. Perhaps you can write the fight as it's own separate story or you could write a story where Frisk goes the genocide route that way you can have Sweetie Belle fight them in that story. That or you could write it as one chapter.

Why don't you just make it a one-shot chapter that's non-canon to the rest of the fic. That way you can type it up without messing up the rest of the plot.

I thought about this, but no. While the chapter may look like a stand-alone that could be non-canon, it will still have some elements that could be important for the future of the story, like the fact that Sans is a freaking good fighter when he decides to act. Yes, we saw him fight already, but he wasn't serious.
When will sweetie encounter the other 2, and I suggest you watch terminal montage's Something about series because i would LOVE Sweetie Belle to encounter the clusterBEEP that is that clump of dimensions.
Who knows? Maybe an Alternate Sweetie Belle could happen.
Also because I want to see sweetie's reaction to MEME Nova.
