They're rather tasty.

I have a pound of them in my freezer. I'll be cooking up another batch in a week or two, also to freeze, assuming these work out well. This is all part of my "Archonix is broke and needs to find ways to eat dead cheap" drive. Beans are it. Kidney beans, butter beans, pinto beans, black beans... lentils, a shitton of rice, a few lb of cashew nuts and a couple of bags of spices. The only things I'll be buying fresh for a while are your basic vegetables, orange juice, a little bit of chicken and some beef when I can afford it. Yep, I'm damn near going veggie to pay for my cat's leg (and a few other things like, er gin I guess)

Remember: don't fret, don't sulk, buy dry and in bulk. It seems like a big outlay at the start but you can save a fortune if you plan ahead. Admittedly this isn't an option for people who haven't got the storage space; to be honest it's kind of tight for me as well, but it's either this or start missing on the rent.

Amazing what you can do with a few simple ingredients, some salt and some pepper and a bit of alcohol.

Just make sure you boil the devil out of those beans, or you'll regret it in the morning.

Potatoes are a great poor man's food too! You can make baked potatoes, potato stew, potato soup, all for very little!

Beans + vegetables + tomato sauce + spices = vegetarian chili. Cook up a huge pot and freeze it in meal-size containers. If you like chili, that is.

Goat Licker's Red Beans and Rice recipe:

(Note: availability of some of the following ingredients may depend on your geographical proximity to New Orleans)
A pound of red beans
A pound of andouille sausage
a thing of pickled pork
optional: tasso ham
the cajun trinity: green bell peppers, onion, celery
garlic

After cutting the pork and sausage, cook it until brown, and remove from the pan. Chop up your trinity, and cook them in the fond left over from the meat. Cook your minced garlic for last so it won't burn.

When the trinity is nice and transparent, dump in your meat and most of the red beans. Some of the red beans you'll want to mash with a masher, so they'll make a nice bean gravy when you put them in.

Pour in enough chicken stock (water if you must) to cover the stuff. Put in two bay leaves, and add sage, dried parsley, cayenne pepper, thyme, salt, paprika, and black pepper to taste (I just eyeball it). Bring it to a boil while stirring.

When it boils, turn the heat down to a simmer, toss it a couple of fresh (not pickled) jalapenos, cover it, and let it simmer for four to six hours. You may want to occasionally taste and add seasonings to your liking.

Optional: Cajun roux (one part flour to one part bacon fat, cook until dark brown - I usually add it at the end)

Cook rice separately (or together if you roll that way). Put both in a bowl, sprinkle sliced green onions (scallions, the green part) on top, and there you go.

I also recommend corn bread, but I ruin it every time.
