While writing "A Kingdom Divided:"
1. I wonder how to make chapter 1 as awesome as chapter 2. And how to make chapter 2 as awesome as chapter 3.
2. Outline or not, there's always place for another subplot.
3. In two lines I managed to make Lightning Dust a tragic character. Mostly because of dramatic irony.
4. After chapter 4 some people will hate that fic. It has something to do with the meaning of 4 in China...
5. High time to look for a prereader/proofreader/whatever. Someone cares to help?
6. I hate writing Pinkie Pie - neither her normal self nor Pinkamena really fits the story (I'd say its tone is more serious, but it's really not: I can't write 100% serious stories, and a story where chapter two begins with a scene that can be described as "Vinyl Scratch and The Room Full of Crazy" hardly can be considered serious. What's more, it's a story about a civil war in a country of colourful ponies, how serious is that?)
7. Other characters I hate to write: after re-reading outline I noticed that I have more or less detailed story arc for each of the mane six, CMC, various other characters, but I effing forgot about Spike... And killing him off early can't be done.
My good fluffy sir, if I may offer some advice.
Don't spoil too much of the story!
Pinkie Pie and Fluttershy are two characters I still struggle with, but I think after several months I am starting to find my own unique way of writing them.

I also had problems with Fluttershy, but I think I figured it out. Still, I like to write Twilight and Rainbow Dash the most.
And somehow, I found the way of writing Rarity, even though she's not my favourite character.
1466638 that's still a lot to spoil my boy! That's a lot of plot twists I would have rather read then be told about! You only want to tell your readers the general premise!
My three favorite ponies to write there~
Rainbow Dash is almost a second skin for me, Twilight is the best of me in formal settings, and Rarity is the best stage act in the history of ever.
