I don't think it's necessarily economically viable in and of itself, but I do like the idea of a non-alcoholic
"milk" bar like the one shown here. Maybe stick it somewhere like Disney World or some kid-friendly resort or something? Maybe a kids cruise line, I dunno... Then there's the idea of styling and theme. I figure you've got five options there: old west, prohibition-era speakeasy, 40's/50's mobster, hypermodern, or franchise themed (which seems most likely if it's a Disney thing). The only trick is you'd need a really trustable and approachable staff of bartenders...
I suppose it comes to a question of if you want it to be a 'family' type thing or a 'kids only' type thing. If it's the latter, then definitely a cruise-line... have it 'mirror' the adult bar, make it included in the ticket price but give the kids a wristband to check in so parents would know how much each kid has had and where they are and such, and to keep track of allergens.
Hmmmmm...odd fermentation process during digestion that affects sugars and complex fats? For an effect like drinking it would have to happen awefull fast...are drunk ponies prone to exploding?
I love these stories, but they only seem to make me feel lonely.
Oh, it's like the milk bar in Majora's Mask. Totally just Romani milk and definitely not some kind of cream liqueur.

Galaxy's Edge has two such attractions:
• Black Spire Outpost village has a stand that sells both Blue and Green Milk (secretly a smoothie and slushie, respectively).
• Oga's Cantina has, among many other items, both of the above, plus a "Bantha milk and cookies" for kids and kids-at-heart. It's worth noting that whole Oga's has alcoholic beverages, none of the above are.

Now if only they could serve good milk there, the blue milk was definitely not my kind of beverage.
(Also Orlando’s Galaxy’s Edge serves both as alcoholic beverages too.)
