Anyway, it was just not realistic to focus too much on Shining Armor. He was a side character in a show with a lot of main characters fighting for screen time.

You know that is part of the beauty with those kind of characters you have little to know information about. As a writer we can make them however we want unlike with characters who have established likes and dislikes. It is basically our job as fanfic writers to breathe life into those vague characters.
