You are invited to a dinner party, but all you get is green food by your new pony friends. I think you're best bet, might be getting good friends with a griffon, then you might get da meat.

Well, Rarity's dad and Fluttershy catch fish, and I can get eggs, cheese, and beans. It'll take some tweaks to my diet, and substitutions in my recipes, but I'll live.

I don't see the ponies being vegan, it's shown in the series that they're ovolacto and I'd like to think that in regions on the coast they some sea food. It would initially suck, but we humans being the tenacious and adaptable survivors we are, I would get more beans, peas and legumes in my diet or double-up on the eggs I ate, if worse came to worse and I absolutely needed meat, I would either appeal to the princesses for some for of limited hunting permit or make a deal with Fluttershy because she seems to have no qualms about giving meat and fish to her predatory animal friends or buy meat and fish from griffon and hippogriff merchants.

I'm vegan, so i would eat even less stuff than the ponies, no milks and no eggs, so no problem for me, unless they don't have beans, lentils, and b12 supplements XD, then i will be forced to eat eggs at least.

But in regards to surviving in veggyquestria, nothing would really change for me, as id try to survive with the magic of cheese!

Im not vegetarian or anything, most of the time, im just too lazy to get proper food, and since i was also too lazy to get a fridge in my apartment (been on my to do list since i moved in 10 years ago) id usually buy stuff, that can be stored at room temperature.

The waters of Equestria probably have less arsenic in them or whatever, so the fact that they're known to be willing to fish means that my diet would regress slightly but not actually change. Depending on how a query about Applejack's pigs and Fluttershy's chickens goes, might not even need that much.

Ponies are not strict vegans. Most of them eat eggs. Pegasi tend to like fish. Making friends with a griffon would likely get me some leads on some tasty meats....
