I think in previous dimension they are friends and the weren't any sings of affection.
The anthro Celestia is unknown but probably the only difference is body

I think he would choose someone of similar age, not with thousand years difference.
He will probably also find a way to make them immortal/ageless later.

Immortality locks you at the age you gained it (in most cases) so while Celestia is technically a thousand+ time wise, she is still (around?) 25-26 biologically. Time and age becomes a mess when you are immortal

She would accend to a Queen/Empress if she married Lorenzo, as that is the next "rank" within a monarchy.
