Can't decide. Both are amazing in their own ways. Though Bill Cipher will always be my fave!
I like both but Gravity Falls is definitely better. I can't think of a single bad episode of that show While Star vs the Forces of Evil definitely took a few episodes to become something great.
Honestly, I can't provide an honest opinion. I've seen neither of them. So can I take a third option? If so, MLP (because it's also animated).
