Well, might be more accurate to say that if Haruhi finds the universe unsatisfying, she'll unconsciously destroy it and move on to a more interesting one.
...and signs are that the universe they're in was recently created...
And so it's pretty much up to a rag-tag bunch of aliens, psychics, time travellers (because Haruhi likes them, and so probably created them), and Kyon (normal human and living embodiment of deadpan snarking), to try to keep her satisfied and interested with this world so she doesn't casually annihilate it. All without tipping her off to what's really going on.
