In Ponyville, the barber trims the fetlocks of everypony and only those ponies who do not trim their own fetlocks. This is not a paradox. Why?
Being the first to give the explanation I'm thinking of is worth one point. A novel logically sound explanation is worth two points. Repeating an explanation that has already been given is of course worth zero points.
Points are worth nothing beyond possible bragging rights.
Because the barber isn't a pony?

Do you trim fetlocks? I don't remember if fetlocks are a part of the pony that gets trimmed. If not, it's a moot point.
The barber can't trim their own fetlocks, because that creates a contradiction (only those ponies who don't trim their own fetlocks). And they can't be going to some other barber, because that also creates a contradiction.
Of course, given the 'verse, the barber could simply not be a pony. Yes, statistically speaking, anyone you meet in Ponyville is probably a pony, but that's no guarantee. A griffon or a minotaur could do it trivially. (A changeling could also do it trivially, but probably at risk of blowing their cover.) I'm gonna go with that.
