Awesome dinner and movie tonight. · 2:54am Dec 31st, 2023

So the entire cast iron section of one of my local Krogers was 30% off, so I splurged on a new griddle pan and invited a coworker over for dinner to pay them back for that adorable Tails plush.

Lessons learned:
Less oil in new pan.
Write out the recipe when you're isolating a mushroom sauce from a 4-item Hello Fresh meal card.
Don't be afraid to slice the mushrooms big. My guest insisted on helping out in the kitchen tonight, and at first I thought she was slicing them too big, but they were absolutely perfect when everything was said and done.

Definitely doing this again soon, because we only got through one of the Sonic movies, and we want to see what else this divine mushroom creme sauce goes with.

She's just one of my favorite people to work with, and she loves mushrooms, a first for my family or friends, so we had to do this mushroom cream pan sauce.

I tell people that mushrooms are liars because of how much they shrink.

I would just advise using Krisco to age (clean) the cast iron instead of just washing it with soap and water.

Not a bad way to spend the day. But when you went from worrying that the mushrooms were sliced too big to Sonic, my first thought Mushroom Hill Zone. The mushrooms are sliced too big? No, motherfucker, the mushrooms are that big!

... Oh right, and giant mushroom world was one of the travel ring destinations in those movies!

I hope you know how to wash cast iron. That stuff is easy to rust!

Yeah. My problem tonight was the raised surface of the griddle; all our other cast iron pans are completely flat, so I made the mistake of putting too much oil in there. This was a reverse sear on the ribeyes, and they were only in there for about 90 seconds, having already come up to 145° in the oven on a separate baking sheet.
