I need a task at sugar cube corner my blind protagonist can do besides washing dishes. I have a few ideas, but I wanna throw this question out to those that have stuck around this long.

How about take the Orders of the costumers and gute them to the kitchen
Baking? So long as he knows where everything is? I don't know, I'm not blind.

I like this idea, and I'm going to squirrel it away in my notes.

kneading dough is pretty brainless. so is being a standmixer. I just need something other than our human to do for a scene besides changing the smoke detector batteries. And it doesn't have to be in the kitchen. I need something he could do with Mr. Cake, as he's trying to get our human to take a break by doing something else
Defending on how independently he's working, he could do...
Heavy lifting - big batches of baked goods means there's large amounts of bakers goods that they have to receive pretty regularly. With oversight, he could receive goods and put them where they belong.
Peeling/cutting - easy enough to do without sight. Touch can pretty easily determine if somethings been properly peeled, and proper cutting technique will keep his fingers safe.
Sharpening - knives need to stay sharp. Learning to use a whetstone is made easier with eyes, but actually doing it is all about technique. Probably an infrequent thing, though.
Honestly, the biggest barrier to him helping out with the baking isn't necessarily his blindness, but his training. If they teach him how to bake in their workspace, he'll get familiar with where everything is in a hurry. Recipes would have to all be volumetric, which isn’t always ideal. Large-scale baking is more flexible, though.
Pies and sweetbreads are probably something he could do with ease once he knows where everything is, but confectionery work is probably never gonna be something he can do as well as the others.
I can think of a few things:
Baking/kneading dough
Setting the tables in the main sitting area of Sugarcube corner
Taking customer orders
Add toppings to deserts like sprinkles, chocolate chips, etc (something he could do with Mr/Mrs. Cake)
Take out the trash
Sweep the floor

Well kneading or mixing is something that a bakery needs doing all day long, moving bags of salt, sugar, flour, and other sundries from storage to the kitchen pantry could be done once he's got the floorplan down.
I can't think of anything else that hasn't already been suggested. All I wanted to say is that I'm glad you haven't forgotten about this story. I can't wait for the new chapter
