Since it's basically Christmas for them. This is a question that needs to be answered.
Could a human introduce some Christmas elements? Like mistletoes and stuff? And... even more food like pudding and other stuff.
Is there any stories that address this critical issue?

Considering that ponies already put up decorated trees, wreaths, garland, and stuff, they also make cakes and custards and puddings. I's suggest looking to traditional Festivus(Saturnalia if you're looking to get risque) or Yule celebrations.
I think it might be just fruits, vegetables, and desserts since they're herbivores. But that's just my opinion.

Considering that ponies already do traditional American/English-style holiday celebration, you could look into Spanish, Dutch, Danish, German or Russian X-mas celebrations. I had read a story where Hearth's Warming was an X-mas/Fourth of July/New Year's celebration. You could keep it Norman Rockwell, with the celebrations being about family and togetherness and presents, or you could go Roman and have it be about excess and orgies and general debauchery(the typical Saturnalia celebration).
