I could make up my own OCs, but it's tiring to think of one all the time. So here's your chance for an OC in the story.

(Warning, I may change their backstories and the way they act as I see fit. I WILL NOT ACCEPT ANY OP CHARACTERS, NO ALICORNS, AND NO RIDICULOUS PHYSICAL DESCRIPTIONS. I'M NOT MAKING A PONY THE SAME HEIGHT OR TALLER AS CELESTIA AND LUNA. I'M NOT GONNA HAVE THIS CONVERSATION AGAIN. I'M LISTING THE TWO AS NEARLY 8 FEET TALL BASICALLY ROBERT WADLOW HEIGHT.)
For comparison, the Emperor is 6'5" 260 lbs. Kind of like this guy.
I could make him as big as JJ Watt but that's pushing it.

Black fur with blood red on the arms and legs. Grey eyes with a large scar on his left cheek. His left horn is replaced by a metal one. 6’8-6’9 (whichever you prefer to use). Around 300 pounds, with a noticeable percentage being muscle.
Being noticeably bigger and stronger than normal Minotaurs, he was ostracized by his peers and most of his family. Becoming a mercenary at a young age, he was feared in certain areas due to his merciless violence on targets. Around the age of 29, he retired and made a family for himself. One night, while away on business, a runaway group of human slaves broke into his home. Desperate for food, and quickly growing agitated due to being told that they don’t have any, the attempted to take the both of them for ransom. In the ensuing chaos, his wife and son both were dealt lethal blows to the head. Fearing that this would attract attention from the law, they burned the house down. When he returned home, he flew into a rage like no other when he found what happened. Easily tracking them, he brutalized them with his bare hands. Realizing what he had done, he fled his home country to Equestria as a form of self-banishment. Spending the next ten years wandering Equestria, and taking temporary jobs wherever he could, he was still sympathetic to human suffering. Though mostly a pacifist now, he’s still willing to put up a fight if needed.
In my head, Minotaur are usually 6’6 tall.

Yeah that seems fair. There's a lot of artworks where the Minotaur isn't that much taller than Theseus.
Though In my mind, there are still those who are behemoths, at least by Minotaur standard, compared to others

A human soldier who mainly focuses on close quarters combat specializing in hand to hand combat. He is one of the best humans in hand to hand combat but has a tendency to go up against far superior foes and is usually easily defeated. He survives by pure luck but never stops believing in the dream of the Emperor and what the Empire stands for.

Backstory: Born into a lower middle-class family and raised near a bad part of town. Joined the military in hopes of getting a better life for herself. Specialized in being a sniper with hand to hand combat as a secondary specialization. April's small stature and the training she went through to prove herself gave her the nickname "Snippet". Her preferred weapon would be one similar to the Barrett M107A1, a .50 BMG sniper rifle, but can adapt to any sniper class rifle depending on the situation at hand.

Was gonna say that's the exact same name as the football player Alex Smith, but I'm gonna give it a pass. Usually took inspiration from the names of football players for some of my characters.
Nickname? Usually, Legionnaires get their nicknames from something they did or based off of their personalities.

I have never heard of Alex Smith as a sports player. I am not big on sports in general and just at random came up with that name. Unfortunately as you stated in another post you want to dodge white guy names and all I am thinking of right now are very white.
As for a nickname I was going to let you decide on that as I felt that if I did give him one it would be to obvious who he was based off of and I wanted some ambiguity in that.

No it’s fine. 1 or 2 wouldn’t hurt. Was being selective because I’ve read thousands of fics with characters using stereotypical white names for most of their characters and it really annoyed me how authors weren’t being creative enough with their names.

Hails from a small town in the Reinlands, his family has a military record going back at least 800 years and in that time has risen to a minor military noble family. Family Crest is silver, sky blue and pomegranate red, with an upright Gryphon holding a pomegranate. ( this character is based off of one of my ancestors that my grandfather recently told me about. My family has roots in old German nobility as military commanders/ officers. At least up to 1700.)

She has been given the nickname "Iceman" due to her ability to remain calm in combat environments and general Military competency

He is a Captain in the Imperial Air Force, he flies lead for his flight in a F-15 Strike Eagle, his callsign is Pixy due to his 'graceful and floaty flying'. His decal is a red dog head biting its chain leash.

Description: Talks quietly, loves warm clothes (will often wear a jacket even when its around 83, but will pack it away at 90), Just follows orders, not caring what they are. Usually seen with some sort of an SMG, and is nicknamed 'Soda' after him opening a soda can in a APC and accidentally spraying everyone inside. His tall stance usually gets him selected when someone asks for a volunteer and sees him kind of above everyone.

Description: Dark coat, foal sized (so, like, 3 ft 7 or something). Only around one hundred pounds.
Description: He worked for an archeologist when he was a foal. Ended up getting cursed so he stayed that size. After escaping the archeologist he found the military. His small stature and dark coat, combined with being quick thinking and fast, made him perfect for espionage and assainations. He is nowhere near perfect, yet he is still one of the best. The struggle of the humans strikes a chord within him, and he holds no sympathy nor loyalty to the Equestrians. His good with any weapon you give him, though he loathes those which make too much noise. Crossbow, dagger, anything that can be silent. He is sometimes called the Reaper for how efficiently he can kill. His magic can cancel most sound he would make as well. His close quarters skills are a bit sketchy unless if he has a dagger. He may look like a child, but don’t be fooled, because he is ready to kill.
