A Challenge If You Will

So far, I've seen two "human becomes Rainbow Dash" stories, one "human becomes Twilight Sparkle" story, one "human becomes Pinkie Pie", a "human becomes Celestia" fic, and one "human becomes Rarity" story (I'm purposefully excluding my own). Now, I'm fairly certain a good "human becomes Fluttershy" won't be too far behind and I've seen a couple of pretty good "human becomes background character" fics like Lyra and Changeling number 2317. But then comes a sort of... shall we call it a 'dilemma'?... that I just can't get my mind off.

If an author decides to use this trend for a premise, how would they go about writing a "human becomes Applejack" story? I mean sure, it would be random and funny at first. At the same time, however, it doesn't seem like something that could really be dug into. The novelty would soon collapse into a bland mess and thus, I propose my challenge:

Prove to me that it can be done. Point me in the direction of a well-written, well-paced, and well... good fic that uses that premise correctly. Show me that a "Why am I Applejack?" can have a likable result.

Hard mode: Write a well-written, well-paced fic that uses that same premise. Show me what you can do with it.

All right. Now that I've gotten that off my chest, I'm going back to worrying about other things. (Registration for college classes can be a pain sometimes.)
